Personally I wouldn't do it. As I'm sure you know, raw eggs can have salmonella.

If you get free-range organic eggs, and follow the recipe exactly, you will probably be OK. People in the Mediterranean eat raw eggs every day, in the form of fresh mayonnaise (raw egg, oil and vinegar whipped up together), and they aren't all falling over with salmonella. Likewise, anyone who's eaten steak tartare has eaten raw meat AND raw eggs. Just make sure that they are very fresh, plus free-range, plus organic, and that you clean the shells before you break the eggs, so that no dirt on the shells gets into the mixture.
Basically, never ever buy eggs that aren't free-range and organic. I haven't, ever since I started cooking in my early 20s, and I have never become ill from an egg.

Strange, most non-baked recipes for cheesecake don't have eggs. I fyou're not happy with it, look for one of these.
If you still want to go ahead with your recipe that's ok, after all, people eat mayonnaise everyday and that's raw egg too. Eggs in the Uk, have to come from hens vaccinated against salmonella and their are routinely checked.
If you're not sure still you can get pasteurized egg in cartons (like juice) at your local supermarket.
Refrigeration is more than ok, but don't keep it for too long, 3 days tops.

I once microwaved raw eggs, look it up in The Joy of Cooking. I think I had to zap it until it was 165 degrees, then let it cool, but I'll look it up some more for you.
I also once read that healthy people don't have to worry about salmonella as much as little kids and older folks. You can buy pasturized egg products, or powdered eggs, both of which are nice and safe. And expensive. :P

The chance of buying an egg with salmonella is 1 in 20,000. So the risk is low, but just to be safe you should buy pasteurized eggs when you are going to be using them raw. They are heated to 145 degrees for 3 minutes to kill bacteria. Also, you could use Egg Beaters(the ones that come in a carton) because they are always pasteurized.

In the UK it is okay to eat raw eggs, but it is better not to give them to elderly or young children, of the US I can't speak.. oh and pregnant ladies shouldn't eat raw eggs, even in the UK but really it is pretty safe on the whole (in the UK) Eggs have a bad press and people shouldn't worry too much.. They are wonderful.. so much you can do with them.. Let's hear it for eggs!!!

It could be and it might not be.
I eat raw cookie dough(and lots of people do) all the time and never had anything bad happen.
How many eggs are in it? I don't think 2 or less have the potential for any damage

You Can get some nasties from raw eggs, but do you
eat merangue on lemon pie, mayonnaise, holandaise sauce ? etc. You've eaten it before. If the eggs are fresh and there's no blood or other stuff that shouldn't be there, you should be ok to go ahead and do your stuff.

I think that's fine.. Have you ever eaten cake batter? It's basically the same thing. plus people drink raw eggs for a protein boost and these are healthy folks we're talking about so i think you're in the clear.

If your eggs are fresh then there is nothing wrong with eating them raw.
Eggs are good for you in moderation raw or cooked so you go and make your cheese cake and put it in the fridge.
