Why do people point to their wrist when asking for the time, but don't point to their crotch when they ask where the bathroom is?

A watch displays time. The crotch is dual purpose, it's best for there not to be a doubt whether there's an offer implied or an emergency about to happen.

Perhaps because pointing to the wrist is acentuating the fact that one does not have a watch. If they are asking for the restroom, it's pretty apparent that they do have the apparatus necessary and also are in a desire to relieve themselves.

Little kids grab their crotches when they need to "go"

But since we're grown-ups on this forum, and have learned that discussing voiding is considered a very private topic, we can simply ask where the wash-room is and then excuse ourselves.

Isn't adulthood nice?

Because a watch tells you the time. Your crotch is not a compass. :)

Because as adults you know what is appropriate and not. Why don't you go ahead and test out your own theory.
