The ambiance. I find it even more important than excellent service because without ambiance the experience is not pleasurable which I believe is the main reason for dining out in the first place. For fine dining I find it much better to go to the best hotels or restaurants even although you can only do it a few times a year. For those who eat out several times a week I'm sure they have favourite foods that they order frequently regardless of the City or Country they happen to be in i.e it's lunchtime - have a Caesar or it's suppertime - have a steak & baked potato.

An incredible view (either inside or out)! H2o, for example, on Maine Avenue, sits looking over the Potomac river. I once had biscuits and clotted cream in Sydney Australia in the top floor of a casno overlooking the entire city and the beautiful Opera house. Coppi's, an organic Italian restaurant in NW DC has a terrific collection of old old bicyclist pictures on the walls. I love having something to look at when I eat, and when I think back to restaurants, it's the visual aspects I think of.

I don't know if this is my favorite, but one of the key ways I judge a restaurant's service (which is very important to me) is how attentive they are about filling my water glass without me asking. I drink about a gallon of water a day, so it matters, and I think the hallmark of restaurant with really good service is when someone unobtrusively fills the water glasses without having to be asked, on a consistent basis and not after they've been empty for 15 minutes.
