This is our favorite.

Bacon gravy

2 big Tbsp. bacon drippings
4 Tbsp. flour
2 cups water with 2 tsp. au jus base

Just melt the drippings (we keep a tub of it in the fridge), slowly whisk in the flour, keep whisking for a minute or two, then slowly add the broth. It'll thicken up after several minutes.

Save the pan juices for whatever meat you have cooked. Put in refrigerator to cool (later take fat off top).

Put 2 Tbsp. butter and 2 Tbsp. of flour in pan you cooked meat in if possible. Those brown bits are the best flavor. Cook till mixture is smooth and a blonde color. Add 1 cup of appropriate broth, chicken, beef, etc. I use 1/2 of each for pork and veal. Add pan juices and salt and pepper. Bring to boil, reduce heat and simmer till desired consistency.
