I like the texture and shape of ziti better, but I want to mac and cheese to set up right. The recipe calls for 7 oz of elbow macaroni, will I need less ziti? thanks!!

To quote Rachel Ray " Ziti is awesome for Mac n Cheese because of the texture, and the cheese can hang on the pasta good too." That's what she said on one of her shows. And yes use less ziti, but keep in mind how many people your feeding and fix your recipe to suit them.

Measured by dry weight, pasta is pasta. But if you use a measuring cup, you're going to end up with much less pasta, volume-wise, in the finished dish. So instead of measuring out the ziti, just go with half the box/package (assuming it is a 1-pound package).

Also: the long, cylindrical shape of the ziti means the cheese sauce won't permeate it as thoroughly as if it were elbows. Assuming you're making your mac & cheese "from scratch", just make sure you squash the pasta (use a wooden spoon) after you've added the cheese sauce to the casserole/baking pan. That will force air pockets out, and force sauce into the empty cavities.

The baking time shouldn't be affected too much, but it would be best to cook it for the length of time specified in the recipe, then check it. If it's still a bit runny, bake it some more (like, 10-minute intervals) until it's firmed up to your liking.

The only difference you will find using ziti is that because it is a larger pasta your dish will be drier. Just use more cheese sauce to make up for it. You may have to "play" around with the recipe till you get the texture you want.

It should turn out just fine but since the ziti is larger after it's cooked you should use less of it than macaroni.

Put the same weight in ziti. The only difference is, you may need to bake it for longer, otherwise, go for it! :)

7 ounces of pasta is 7 ounces of pasta no matter how it is shaped. And, it doesn't matter how long you have to boil the pasta to get it to the consistency you want, since the cheese sauce is added after the pasta is cooked.

yes it'll be fine. i tend to change my noodles a lot for variety, then it doesnt seem like you're eating the same thing. lol
