Things I have added to rice pudding:

I love coconut, and also coconut milk in rice pudding.

Grated orange or lemon peel gives a nice fresh flavor.

Raisins are great, and other dried fruit also.

I have also added fresh or canned fruit -- I liked peaches and pineapple more than apples. However, you need to adjust the liquid content of the recipe so it is not too soupy.

Have fun with spices as well. Try adding some orange peel and a little cardamom. Tastes very exotic! Brandy or bourbon flavoring (or the real thing) with raisins is good, especially with cinnamon.

I LOVE rice pudding. Can you tell?

That takes me back, nearly half a century. On a fine Sunday, I'd put a breast of lamb pot roast and a Rice pudding with nutmeg in the oven and we'd take the baby out for a long, long walk in her pram. When we got home, I'd stir in the top skin, another sprinkle of nutmeg, and let it go on cooking while we had the pot roast.

Nutmeg - or any of the "Christmas" spices, allspice, ginger, cinnamon. Make it with "GOLD TOP" - Channel Island Milk.

Dont forget Jam or honey if you like it sweeter.
