Garlic Spaghetti
8 ounces spaghetti
1 raw egg
5-8 cloves garlic, peeled and press (not less)
4 tablespoons butter
1/4-1/3 cup grated Parmesan cheese
1 teaspoon dried sweet basil leaves
1/4 cup finely chopped parsley
fresh fresh coarse ground black pepper (a lot)
red pepper flakes
vegetarian bacon bits or regular bacon bits
Parmesan cheese
black pepper
Boil spaghetti in a pot of boiling water; (don't over cook).
While spaghetti cooks, prepare sauce (this is a thick paste that you toss over the cooked spaghetti).
Place the egg garlic, butter, grated Parmesan cheese and dried sweet basil in a blender or food processor and blend together until smooth and well blended.
(You can do this by hand if the garlic is pressed).
When spaghetti is cooked and drained, (and hot) place it in a large bowl and add the garlic-cheese paste and chopped parsley and ground black pepper.
Toss well.
Place on serving platter (I warm my plates) and pass the red pepper flakes, bacon bits and more Parmesan and black pepper around for each to add.

Aglio e Olio for 4 people
500g dry pasta (spaghettini is the classic, but spaghetti would work)
1/2 cup extra-virgin olive oil
1 tbs fresh garlic, finely chopped (or more)
1/2 tsp dried crushed chilli flakes(optional)
freshly grated Parmesan
Cook pasta al dente as usual.
Put the olive oil and the garlic in a large skillet over a medium heat.
When the garlic begins to change colour add the red chilli if using
Stir well and remove from heat.
When the pasta is cooked, return the skillet to a low heat.
Drain the pasta and add it to the skillet.
Toss until the pasta is well coated with sauce.
Serve at once with the Parmesan.

Hi,
It is pehaps a bit sad but true that a good jar of supermarket pasta sauce works a treat.
I have fiddled on with pasta sauces with some success in the past, which were fine, but was complmented on what was a big jarful of Dol Meo.
I kept quiet about that.
These cheffy programs use tinned tomatoes in their sauces, as they reckon they are better than bought ones.
I could launch into a way to do it with greenhouse toms, garlic, shallots, ketchup and wine.
But no - just put a jarful of the stuff in a bowl, and if asked by guests, just fib that you made it last night.
All the best,
Bob

Oh yes!!! sometimes I cook them without sauce! Here I give you my recipe, I hope you like it!
Boil the spagthetti. In a pan add a little bit of olive oil. Cut a little bit of onion,1 tomato and some tinned mushrooms. Once everything is a bit cooked add some 1 frankfurt sausage and 2 slices of bacon ( if you prefer something healthier use turkey). When everything is cooked, put the spaghetti in the pan and add some cheese...and ready to eat!

Melt as many types of cheese as possible (Cheddar, smoked, blue cheese, soft cheese) slowly over a low heat in a frying pan with a bit of olive oil and chopped garlic add some black pepper. Mix into a pan of fresh cooked pasta... yummy yummy.
Make a tomato sauce. Fry some onions and garlic, add some passata or quality tinned tomatoes, add some basil and chili pour over the pasta. Delicious.
Or stir in some pesto and chopped sun dried tomatoes.

If you've got some blue cheese - gorgonzola is best - melt it in a pan with a large knob of butter/margerine & a splash of milk and a tablespoon of Parmesan if you've got it, add two cloves of crushed garlic and a teaspoon of oregano. Pour over the pasta. Failing the absence of these ingredients, olive oil, garlic, tuna flakes or prawns or chopped ham plus oregano or thyme or basil.

Well the chaep way that my mom used to do was add some butter and parmesean chees to it. But if you have some tomato paste and some oinions and garlic with a bit of ground meat you can make your own sauce. just season it with spices that you like.
