This recipe is really quick to prepare and is really nice, I have served it at dinner parties and everyone has loved it. At least that's what they said to my face!!
It is called Express Chocolate Cake
175g plain flour
175g granulated sugar
50g cocoa powder
1 tsp bicarbonate of soda
1/2 tsp salt
1 tsp vanilla extract
1 tbs cider vinegar
11ml vegetable oil
225ml water
1tbs icing sugar to dust
Oven 190C Gas 5 35-40 minutes
Grease 8" cake tin.
Mix all dry ingredients, make well in centre add vinegar, oil & vanilla then gradually stir in water, blend but do not over mix.
Pour into cake tin. Bake. Cool on wire rack in tin for 10 minutes before turning out to cool completely. Do not overbake as the secret of this cake is moistness.
It is lovely served with icecream.
Hope you enjoy it.
