Mine is just a little different from everyone elses and takes a bit more time, but I promise you that it is good.
800g extra lean minced steak
4 rashers of smoked bacon (rind and fat trimmed)
Large splash of olive oil
1 large or 2 medium onions, finely chopped
6 to 8 cloves of garlic
1 red pepper deseeded and finely chopped
1 stick celery very finely chopped
1 small carrot, grated
fresh chillies to taste (I use about 5 of the small very hot ones)
2-3 dessertspoons of mild seasoned chilli powder
2-3 cans chopped tomatoes
1 good quality beef stock cube or a couple of teaspoons concentrated beef stock.
1 or 2 cans of red kidney beans - drained
1 small can sweetcorn - drained
1 heaped dessertspoon of tomato paste
one wineglass of red wine or strong beer
2 teaspoons of dried oregano
1/2 teaspoon of cocoa powder
2 teaspoons of sugar
splash of Worcestershire sauce
splash of Coca Cola
a large squeeze of tomato ketchup
salt and pepper to taste.
•Dry fry the minced steak and bacon until it's browned and drain off the fat. Put the meat to one side.
•Heat the olive oil and then add the onion, garlic, celery, peppers, carrot and chillies. Fry them at a very low heat until they are softened.
•Add the meat to the fried vegetables and add the chilli powder and stir. Add the beer or wine and cook off the alcohol.
•Add the canned tomatoes, stock cube/concentrate, the cola, tomato paste, ketchup, oregano, Worcestershire sauce, sugar, cocoa powder and sweetcorn. Bring the sauce to the boil stirring all the time. Reduce the heat to a simmer.
•Simmer for about 40 minutes, tasting as it cooks and add salt and pepper to taste. If the sauce gets too thick, add a little more water.
•Turn off the heat and add the kidney beans and stir.
•Garnish with fresh corriander and serve with potato wedges, tortilla chips or crusty bread and butter. Also have a side dish of soured cream with chopped corriander and lime wedges.
•For best results, the sauce should be allowed to go completely cold and then reheated. Better still, cook it the day before you plan to eat it.
This sauce came about through trial and error over many years and it's a huge favourite with friends and their kids. You'll notice there are a lot of vegetables in this recipe. It's a great way to get kids to eat veg and it really does make the flavour of the dish.
If you know people don't like it hot, use less chillies, or look for a milder variety.
Before you say 'Yuck!' trust me about the Coke and the cocoa powder - it makes a massive difference!

If you want really simple, just get a jar of chille con carne sauce from the supermarket and jazz it up with extra onions, garlic and kidney beans but if you want to make it from scratch here is a simple quick recipe:
This recipe takes less than 30 minutes to make from start to finish
1 lb of mince
2-5 cloves of garlic (depending on how much garlic you like).
1 or 2 tbsp of chili powder
Chop 1 onion.
can of chopped tomatoes.
can of kidney
Heat the large frying plan over medium-high heat. Add the meat, and cook, stirring, for 5 minutes, or until brown. Remove the meat from frying plan. If there is any fat in a pan, pour it out.
Add 1 tbsp of oil to this frying pan and heat for 30 seconds. Add minced garlic and chili powder. Stir for 30 seconds.
Add the onion Cook, stirring, for 4 minutes.
Add the browned meat, tomatoes and beans to the pan. Mix everything thoroughly. Cook for 3 minutes.
Taste it and adjust the seasonings. You might need to add some salt. You can also add more chili powder.
Serve piping hot with rice or jacket potato!

ill try and make it simple. i dont know how many people its for but this recipe is for 4 people so adjust as necessary.
PREP
1lb Lean steak mince from a decent butcher.
3-4 garlic cloves finely chopped
1 large onion finely chop half and chop the other half in thicker slices
2 small real chillies (sliced, wash your hands after slicing these as you risk burning yourself)
2 tins of chopped tomato in tomato juice (avoid the ones with herbs etc)
1tin of kidney beans (optional)
chili powder (rajah if possible)
COOKING
pre-heat a large non-stick dish (i use a 28cm wok shaped pan with a glass lid)
gently fry your mince till its brown-season with salt and pepper
sprinkle small amount of chilli powder over the mince and stir.
Add the onions. stir
wait till its reduced and add the chillies and 1 tin of tomatoes.
stir gently, add the garlic put the lid on and simmer for 15 minutes.
after 15 minutes give it a good stir and taste the sauce to decide if you think it needs more chilli but be careful not to put too much in.
if required add more tomatoes and return to simmer for another 15 -20 minutes. addin the drained kidney beans if you want them.
and thats it. i could also advise that you prepare this on friday night as it usually tastes much better the next day.

Chilli con Carne - serves 2 - 3
450 g 1lb lean minced beef
1 medium onion, finely sliced
Sprinkle of Garlic
1 (398 g/14oz can peeled tomatoes, drained. (I used crushed)
1 (75 g/30z can tomato puree (you can buy in a tube also)
Chili powder (to your liking) 1/2 teaspoon maybe
1 (425 g/150z) can red kidney beans, drained
(SPECIAL NOTE: REALLY WASH THE RED KIDNEY BEANS THOROUGHLY)
Sprinkle of salt to taste
1. Place meat in the bowl, break up with a wooden spoon.
Heat of power 10 for 4 minutes
2. Drain off the surplus fat. Break up the meat again with a
wood spoon.
3. Add the onion and garlic and stir.
Heat on power 10 for 4 minutes
4. Add all the rest of the ingredients and stir well.
cover with a piece of cling film. Pierce the top.
Heat on power 10 for 5 minutes.
Remove the cover and stir
5. Place in microwave, uncovered.
Heat on power 4 for 12 minutes.
Stir then heat on power 4 for a further 10 minutes
6. Stir well, pour into a serving dish. Serve with crusty
bread and a green salad.
Cooking time 35 minutes
Utensil 2.25 litre/4 pint glass bowl.
(if you make it up early, you can re-heat when your guest arrive)

1lb Minced Beef
I large onion chopped

I tin tomatoes
3 tbsp tomato puree
1 bay leaf
2tsp oregano
half tsp chilli powder
1tsp cumin seeds
salt
Sweat the onions, in a little oil, in a large pan.
Add mince and seal.
Add red pepper, garlic and bay leaf for few mins.
Mix chilli, cumin, salt and oregano together add to pan.
Add tinned tomatoes and puree. Stir well, bring to simmer, for at least 45mins. Just check frequently for moisture and adjust with a little water.
Serve when required.

I go with Dee Cee - it's the way I do it on my little boat with a small galley.
Be careful with your Chilli con Carne mix - there is a normal and "hot". Your guests can always add more chilli - you can't take it away.
Although it's more expensive, if you aren't catering for too many - microwave in 2 mins rice is very quick and easy - no mess no washing up!

Williams Chili Seasoning (foil type of package, with silver and black markings) is the top one on the market and almost always beats homemade recipes. The key to it is to let it cook for a long time and then refrigerate, and warm up.
That's right, it tastes better the next day after it sits overnight in the fridge.
Get Chili ground beef... looks a little different than hamburger. Don't overcook it and drain it well. Substitute tomato paste and water for the grease you pour off.

Use the best quality minced beef that you can afford.
*Brown the mince
*add chopped onion, oxo cube,1 or 2 cloves of garlic, Chilli powder (depending on how hot you like it) Paprika, 2x tins chopped tomatoes, tomato puree, kidney beans, seasoning simmer for at least 2 hours (preferably the previous day)
DO NOT use shop bought packets or jars of mixes they give it a horrible taste.
On saying that I think the recipe that Rhiannon J gave you sounds great and I might just try that one myself

Best minced beef fried gently. No oil (Plenty in the meat)
Add tin chopped tomatoes, kidney beans, diced onions and a packet of Chilli Con Carni mix (from Tesco). Heat and eat.
