not eating after certain time is old wifes tales - i eat something right before bed a lot of times and its been scientifically proven- at night body goes into a little starvation mode so there is no need to make it even longer.
find daily calorie intake calculator on the net, enter all your stats and it will tell you how many calories you need a day to maintain, take off 400-600cal off that number and thats how much you need to lose.
eat 5-6 small meals a day (eat every 2-3 hours - it optimizes your metabolism)
5-8 servings of fruit and veggies a day (have lots of veggies to eat in between meals if you are still hungry)
8 glasses of water -carry bottle of water with you and when you feel hungry drink it - we often confuse hunger with thirst (our bodies confuse it)
have complex carbs for breakfast - they give you energy
have protein (lean meat, legumes etc) for dinner - repairs muscle
cardio is the only fat burning exercise and burns fat all over your body (running, jogging, swimming, spinning, elliptical etc) 4-6 times a week for average of 45min, light weight training a few times a week (more muscle=faster metabolism)
dont consume foods that are made of white flour (white bread, cakes, pasta etc.), sugar loaded foods (cookies, ice cream, candy etc) and nothing fried, oily.
of course you can spoil yourself once in a while with a little treat:)

The no diet diet. Diets don't work. I went on one when I was a teenager (I wasn't even fat to start with) went anorexic for a while... completely stuffed up my metabolism and then got quite chubby as a result when I went back to eating normally. I gave up the madness of caring about what I ate in my late twenties and consequently from then on I never looked better. Get your mind off it and live your life and just eat everything in moderation.

I do the Fit 4 Life and lost 10 lbs this summer.
On this diet you eat as much as you want but the food is combined. Which means: Meat with green veggies, starch with greens, dairy with greens.
No mixing meat, starch and dairy in the same meal.
And of course, since it cuts out the sugar cravings, no desert.

In june? You still have time, good thing. Drinking red tea helped me to loose weight, but don´t do it after 6 pm, and no more than 4 teas per day. You can start with the first one before breakfast, although some people get nausea doing this, not me.
Try cutting pasta, breath, etc. Switch to the whole grain version.
Have you tried swimming? You burn a lot of calories and will help you for your Can Cun trip.
Hope it helps. Good luck :o)

If you can't lose weight then you might be at the healthy base-level weight for you body. Have you considered that you don't need to lose weight?
But seeing as you haven't given your height or BMI, here's all the tips I can think of:
As preparation, I did a ten-day lemonade detox - not for losing weight, but to cleanse my body and make me feel good about food (I found not eating solids for 10 days made me appreciate healthy foods over junk food). You don't have to do it that long, it might be healthier to do just 5-7 days. Don't count the weight you lose on it - it's not permanent. Never use the lemonade detox for a weight loss solution.
Then I ate the same amount of food, always making sure to be full, but I increased the proportion of fruit and veg. I had baby spinach with almost every meal. When I did have carbs, had to be low-GI - brown rice, wholegrain bread, etc, and I avoided frying anything ever - roasted, steamed or boiled it all instead. Low GI makes you feel fuller but doesn't play around with your insulin levels too much, which is good for avoiding sugar-lows, etc.
Eat as much fresh produce as possible, so don't cook it unless you need to (except carrots - it's better to steam them).
Make things spicy, especially later in the day. It does actually encourage metabolism. Also drink a glass of metamucil each day to give your digestive tract running well.
I also followed the rule: eat like a king for breakfast, a prince for lunch and a pauper for dinner. At dinner I wouldn't eat many carbs, only some fish or some spinach & egg, and I'd have it as early as possible (like you said). Some days I'd have little snacks between meals, which was good for keeping my metabolism going and also meant I didn't need dinner.
Count your calories, but don't cut them too much. If you go into starvation mode, your body will compensate in ways that will make it near-impossible to lose weight.
I always took a nice walk after dinner to keep my metabolism going a bit longer. Keep staying active. Maybe buy a pedometer and set yourself a goal. Try to create more activity than necessary - if someone reaches for something, get up and get it for them. If you need to take a bunch of stuff into another room or upstairs, do a bit of it at a time so you have to make a few trips. It all adds up.
Cardio work is vital to losing weight - training your heart will mean you burn more calories at rest as well as exercising. Also do weights - a pound of muscle burns more calories at rest than a pound of fat does, and looks leaner.
Cut out alcohol - I'm sure you'll make up for it at calcun. Green tea is a better substitute.
You might consider going vegetarian if you eat meat now. Just remember to supplement B12 and iron. Vegetarian meat-substitutes are often fortified, and contain protein, so consider eating them.
The best way to lose weight is to be active and to make sure your body is running well. To do that, don't deprive it of the resources it needs. Don't go on a fad diet, you'll put it on and more after your holiday, and possibly during when you start drinking or if you go out to restaurants. Plus you'll feel like crap, and what's the point of a holiday if you feel run down and weak.
