BLACK-EYED PEAS AND RICE
1 c. dry back-eyed peas
Water
1/2 c. diced lean cooked ham (or Canadian style bacon)
1 chopped onion
1/2 c. chopped green bell pepper
1 clove garlic, minced
Salt, coarsely black pepper, to taste
2 bay leaves
Generous dash red cayenne pepper (or Tabasco sauce)
3 c. cooked rice
Wash black-eyed peas. Add 5 cups boiling water; boil 3 minutes. Cover and set aside 1 to 4 hours. Rinse and drain peas thoroughly. Spray pan with cooking spray. Brown diced ham. Add onion, bell pepper and garlic. Saute until onion is tender. Add peas, 2 cups water and seasonings. Cover and simmer 40 to 50 minutes or until beans are tender. Remove bay leafs; stir in rice. Continue simmering about 10 minutes or until all liquid is absorbed. Makes 6 servings, 180 calories each.

I am assuming your black beans are also dried. For both, cover with water, bring to a boil, boil 1 minute and then turn off the heat, cover, and let sit for 1 hour. This is the starting point of all beans (or you can cover with water, stick in the refrigerator overnight but I like the quick method better). Drain the beans. Add broth (chicken or beef), a ham bone, saute the trinity (in case you don't know what that is - it's onions, carrots and celery). Drop them in the pot with the broth and beans. Add black pepper and a bay leaf. Bring to a boil, turn the heat down and simmer until the beans are soft to your liking (apx 2 hrs). At about the 1 1/2 hr point remove the ham from the bone and put the ham back in the pot. Add more ham at this stage. Remove the bay leaf just before serving.
You can use whatever kind of meat you want - sausages, hot dogs, beef, etc. For the black beans, I put the bean soup in a bowl and drop a dollop of sour cream in the center.
For the black-eyed peas - they take less time than the black beans to cook and you can add spinach or collard greens to the peas if you like.

well black beans are great. use talapia or chicken
spray a pan with olive oil and lay down your meat
sprinkle with salt, pepper, garlic(fresh if you have the time)
pour black beans over top
and mango salsa over that
bake 350 for about 30 min.
(if you use chicken make sure its cooked through)
its sooooo good! if you like spice add red pepper flake

u can always use black beans in making a taro for your sweets and a soup a black bean soup can help you from your stress but be very care full because black beans can cause you a very bad stomach ache you can use also black beans in bread and other pastries

Put them in a crock pot and cover them with water. Turn the crock pot on high and let them go all night. Season them with whatever seasoning you enjoy and a pc. of ham. They will be wonderful in the morning. If you work put them on in the morning with the seasoning and when you get home from work they will be a great meal.
