When I am stressed it is because I have more work than I think I can handle. So I will work harder until I get the work under control. Physical activity like working out after work helps me handle the stress too.
I took the CPA exam and stressed for months about passing my first try but for every time I felt stress I studied harder, I did pass it all the first try so the stress helped me.
I thrive on stress, it motivates me.

My best answer would be ..

Depends on the day and the situation .. Am I in Mgmt? Am I suppose to be a yes person (which I would never be able to be) .. if I were the manager, I might have a day that has been hectic and be more stern and Say, I need you to just get the job done.
If it was to a boss, I might have to take lunch early.
Stress is something everyone handles different and I dont take things to heart easily. (which is a plus) but on the down side, I dont take lip easily either.

I think mainly they are looking to see if you are the type of person that might "GO POSTAL" .. which wouldn't be too good.
If you can handle your anger, temper or keep composed is what they are testing.
Be honest and take a deep breath.

Think about what they're asking - - if we hire you, how would you react to the stress of being responsible for a busy phone system and juggling the needs and demands of our patients? If you've done this kind of job before, tell them about the call volume you had on a typical day. Tell them about a time when the phones were particularly busy and how you handled that. If I was the doctor hiring, I would want to know that you could handle a lot of ringing phones while keeping the needs of the patients as your priority. I would want to know that you could handle a demanding patient with grace and positivity.

Say that it will drive you to work harder to avoid having stress in the first place. Although me being 13 I haven't had a job interview, I just think its a logical answer.
