Papaya also contains an enzyme which keeps Jello from setting. Kiwi has a lesser effect. If you want to add any of these as fresh fruit, let the jello sett up before adding.

Technically you cannot mix gelatin with anything that contains a protease enzyme. That's why they say that. Pineapple contains an enzyme that will liquefy the gelatin and you will never get it to set, no matter how much you use or how cold you get it. The only other food type ingredient I know that contains a protease enzyme is the meat tenderizers like accent. By the way in canned pineapple the enzyme is inactivated and it will work just fine to make jello

I've only seen the pineapple excluded on the boxes. I have added shredded carrots, celery, marshmallows, Mandarin oranges, peaches, and pears to Jell-O without any problems.

Hope this helps.
Good luck.

If you use pineapple in jello it won't set. I usually just sprinkle it over the bowl of jello when I eat it.
