I'm burnt out on take out lunch, toaster oven pizzas and sandwiches. Does anyone have any simple toaster oven recipes for a quick lunch other than pizzas and sandwiches?

Huevos Rancheros:

1 whole-wheat tortilla

1/4 cup cooked black or pinto beans

1 egg

2 tablespoons grated sharp cheddar cheese

2 tablespoons of fresh salsa

2 or 3 slices of avocado

1 tablespoon of sour cream or Greek yogurt


Heat toaster oven to 350 F.

Place tortilla on the toaster oven baking tray

Spread beans on Tortilla

using the back of a spoon, make a hollow in the center of the beans/ Crack egg into hollow

Bake for approx. 15 minutes or until the egg is set to your liking

Remove the tostada from the toaster oven and transfer it to a plate, and top it with cheese, salsa and sour cream.

Left over Turkey Soup... not suitable for a toaster oven.

I've never seen the USE of a toaster-oven... a microwave SURE, but if I want to use an OVEN, I'll slip it under the broiler.

Perhaps you could make twice-baked potatos ahead of time and warm in your toaster oven ? Or make Nachos ?

Are you sure you're sick of sandwiches? What about bringing and english muffin, toasting it, then adding tuna and cheese for a tuna melt? Or what about sourdough w/roasted red peppers, kalamata olives and fontina? Or whole wheat with smoked turkey and pepper jack cheese? Or country bread with roast beef and blue cheese?

There's a lot you could make in a toaster oven. Maybe get a cook book from the library with a ton of sandwich recipes and just go experiment.

I'm having pepper and egg [egg substitute] sandwich with Swiss cheese - on a long roll. I made it this morning and I'm heating it in the Toaster oven!

Had Huevos for Sunday brunch. On my own I like quesidilla (SP??) Just place the corn tortilla on the toaster pan, Crisco spray olive oil it first, put on cheese as preference, avocado and salsa. Side drop of sour cream. Easy. Cut in pizza wedges. Youm

Im having a simple ole ham and cheese sammich.

Thats a good question about the toaster over things. Other than pizza and sammiches I have no clue.

If you have any animals you want to get rid, a toaster oven is the perfect size for a small to medium sized cat.

Why not take leftovers in a small foil container? Then you could just sprinkle on some cheese &, voila, Surprise Bake.
Just remember to keep the heat low while the food is warming. It may mean that you have to put your lunch in to heat early.
