Time and oven temperature isn't the issue, It's the internal temperature that matters so use a meat thermometer to be sure all bacteria is killed so noone gets sick.

Time is not the answer in cooking meat .Time = guessing . Get a good instant read meat thermometer and roast till internal temp at thickest part of thigh reads 165F REMOVE AND TENT LOOSELY WITH FOIL 15-20 min. A 9 lb bird at 250F ? Could be risky Brine the bird first the salt will kill loads of bacteria, create a real juicy bird and season it nicely Note that a 9lb bird is an old tough bird not a great choice Also at 250F the skin will be pale and rubbery..What happened to two 4lb birds? And 250F for 5 hrs with 2 4lb chickens? seems like an awfully long time.

I always roast chicken at 350 for about an hour and 10 minutes. It will never brown at that temp and after so long it will be very dry. Many people start with the oven at 450 and then turn it down when they put the chicken in. To check it, twist a drumstick when the bone can twist easily, it's done. Professional cook.

Go get a cheap meat thermometer. That bird will cook a long time at 250. The internal temp of poultry has to reach 180 for it to be safe to eat. That's 180 F of course :D I would do it at 300 at least.

5 hours for 8 pounds of meat? I'd check the recipe again, it's usually 30-45 mintues at 350 for a whole chicken, after 5 hours I'd think you'd have more bone then chicken....
