Depends on what kind of chicken you are eating. If you are eating chicken without the bone, with the fork in your left hand and the knife in your right. Turn your fork facing the chicking and point the pointer finger above the fork tines to hold the chicken down - gently cut a bite sized piece with your knife.

If you are cutting the bottom of a chicken with the skin on - gently (with the fork in left and knife in right) slide the skin off and proceed to gently cut the edible parts make sure not to force too much pressure on chicken because it may fly halfway across the room. (have heard many stories)

If it is chicken wings or a chicken drumstick it is even within the point of ettiquette to use your fingers to eat the flesh off the bone, but I'd advice not to do this publicly on a date in a restaurant if you want to make a good impression.

Yes, I eat most food with a fork and knife, including chicken.
If someone were to serve a big bowl of popcorn chicken with napkins nearby, I'd eat them like finger food. Any portion bigger than two bites, however, requires a knife and fork as I do not chew food off the bone (like cavemen did)

As the final exquisite taste and gnawing treat, gnaw the gristle off the end of the breastbone and savor the flavor. You never go wrong eating with a knife and fork. It may be accepted to eat fried chicken in some Southern restaurants but in general when out use the cutlery.
