Put something nasty on his hands so he gets a bad taste. Show him how to use a knife and fork and by the way - where the hell have you been for the last eleven years? What kind of parents are you? I had good table manners drummed into me since I could eat!

An 11 year old? What have you been doing up to now? Are you setting a bad example? Do you belong to an ethnic minority which normally eats with their fingers?
If the latter is the case, then go ahead, but he should be made aware that in Europe most people use a knife and fork and you should teach him these skills in preparation for adulthood.
I was brought up to use a knife and fork, but when invited to a meal by people from the Indian sub-continent, I can eat with my fingers. I can also use chopsticks.

just tell him if he doesn't eat with a knife and fork he can't have any food. If he tries to eat with his fingers, take the plate away. He's old enough to know about consequences. Keep taking the food away until he learns to eat properly. He won't starve. Soon he''l be so hungry he won't care about his refusal to eat a knife and fork and will give in. Remember, you are the parent, not him. He does what you say or he doesn't do anything

Tell him that if he does not learn to eat properly, one day he will be sitting at a nice dinner with a date, and embarrass both his date and himself.
If he still refuses, make him get up from the dinner table, and go to his room everytime he starts eating like a pig. After a while he is going to get pretty hungry.

stay with him and put the plate down and the first sign of him using his fingers take the plate away, he's 11yrs old for god's sake have you no control?? show him there are ground rules. and you won't settle for anything less.firm foot forward, now before it's to late

Does he eat this way if you eat out? My kids (although younger) eat with their hands at home somethimes, but they have perfect table manners if we eat out.
Can you not appeal to his better nature or offer a treat if he eats properly?

Just give him soup for a few days until he gets used to using tools and gradually introduce solid food that he has to use a knife and fork for. If he uses his fingers take the food away at once until he learns that no tools means no food.He'll learn very quickly ,you''ll be surprised.Be calm and firm.
