I went to this Chinese restaurant and they made really good soft scrambled eggs over rice. The egg was not dry and it was very easy to eat.

The 2 things I do to scrambled eggs to keep them soft and moist are: 1. Add cream to the eggs when beating them (about 1/4 cup for every 2 eggs; 2. Keep the heat VERY low when cooking them. I put butter in the pan, with the heat on very low. When the butter in completely melted, I put in the egg/cream mixture and salt to taste. I gently stir and fold the mixture until it is cooked, but not dry. Delicious!

The keys that I have found useful to making soft scrambled eggs are:
Beat the eggs thoroughly, but don't over beat them.
Whisk in the milk, but don't put too much milk, else they'll be watery.
Use a low flame and continuously stir the eggs. Using too high of a flame will dry them out; continuously stirring will form smaller pieces.
Don't add salt until after cooking the eggs, else the salt will dry them out.

they may have cracked the egg over steamed rice. the heat of the rice cooks the egg quickly. my dad does this all the time.

and we shouldn't use milk for scrambled eggs. a few tsps of cold water will make them very fluffy.

soft creamy scrambles are cooked low and gently stirred with a wooden spoon.

the best way i have found is, if you can afford it, get a milkshake mixer. they are realtively cheap, and can be found in wal mart!! Use it and a little milk. The trick is to get the egg airrated. The will be soft, fluffy, and great for omlets.

Use water instead of milk. Not only will they be softer, they'll be fluffier.
