This stereotype is hardly the case these days, as most wineries use mechanical presses to process grapes into must. If dirty feet were a factor as per your query, the winery would produce a substandard product and shortly find itself out of business; that is if the acidic balance of the must didn't kill all the bad stuff from all those dirty feet.

Toe cheese and toe jam.

Nothing like a little Tang or twist to the wine. It helps it ferment faster. Do not worry they strain off the toe cheese.

I don't think it much matters because the juice extracted from the stomping goes through several processes before it become drinkable wine. Filtering, fermenting, etc.

I wouldn't worry about it.
