well a couple things
one was the barbarians destroying rome. Constantine made Christianity last. Judaism was already strong.
The old religions died out as barbarians sought education and to learn to read and write and back in those days the only schools were at religious institutes so you learned about the Christian god also. This caused many conversions and eventually they were aborbed into the culture.
They never died, and still exist in small pockets around the world, just not in mass as they once did. It could change again one day too, the Muslims took the world literally by suprise when it emmerged.
Some say that Zeus is actually the Christian god now and all the other gods like apollo and athena are now the arch angels they use. Others do not believe this theory though. so it is up to each to decide what they want to beleive. there is no right or wrong answer just opinions and no opinion is wrong, it is just an opinion.

Just like anything else, there is an end to everything. Old religion went by the wayside because they were superseded by new religion. People of the time were as much misguided as people of today. Let's understand that Christianity, Judaism and Islam are not the only popular religions of the world. The Hindu religion started way before Christianity. We also have Buddhism, Shintoism, and a lot lesser religion which are just as important as Christianity or Judaism.

The "New Testament": Pagan revenge
Between G-d's own miracles and the Jewish teaching of His Word, the pagan priest/pastorhoods of Egypt, Greece, and Rome were steadily losing their power over the gentile populations. They decided to fight back by creating a new religion, one that would claim to be the fulfillment of the Hebrew "Old Testament," yet would bring back the pagan lies in a new disguise.
Thus the "New Testament" was written, in Greek rather than Hebrew, and attached to the original Hebrew scriptures to try to change their meaning back toward paganism.
The "New Testament" tried to change G-d from One, as in the Hebrew scriptures, into a "trinity" as in Egyptian cults or the eastern religions of Hinduism and Buddhism. It described Jesus as G-d in a human body, like the pagans always described Pharoah and other wicked kings. It declared G-d's Law to be a "curse" that no one can truly obey, announced that there must be a "mediator" between G-d and man, and pretended that salvation could now be achieved outside the Law.
To blind the gentile nations, the "New Testament" also warned people not to learn from the Jews, declaring that Israel no longer possessed the true, complete Word of G-d.
In the Bible, the book of Daniel warned of an evil power--a false religion--that would believe in the true "G-d of fortresses... plus a god its fathers did not know." This religion would "speak bizarre words about the Most High, wear out the holy ones (the Jews), and plan to change the festivals and the religious Law."7 The Christian Church has indeed replaced Passover with Easter (the pagan holiday of Astarte and Ishtar) and Hanukah with Christmas (the pagan winter holiday).

Back then, the conquered nation abandon their gods and went worshiping the gods of their conquers.
But Jehovah is not like the gods made by mans hands.
Jehovah made the universe and mankind, only he has the right to rule over the earth and to tell mankind how to live.
We are in a better position today than those who worshiped false gods.
We have the truth, freedom, hope and a responsibility to share that truth with others so they to may choose life and live.

And thus, they have their reward, just as they believe.
The Gospel of Jesus Christ has existed before them all! And is the same today, and will always be the same.
The Christians do not have a monopoly on the Gospel of Jesus Christ. The Saints do. But these words are defined so differently among the inhabitants of this world that without coming to a true understanding of who the Saints are, none of this talk matter any more than **** on a boar.
Still, there is no excuse for the faithless people of the world to think they know of themselves of what the principles of life are, including the rubber necked Christians. Any man that answers to the name of Christian, and defines his beliefs system as one that is in line with "the Christians" is in as much error as the Jews were when they crucified Jesus in their pride and zealous traditions.

The ancient religions are very much still practiced.
The spirits that were personified in the gods and goddesses that were worshipped in ancient Egypt, Babylonia, Medo-Persia, Greece, and Rome are still here today and they are still rulers of the darkness of this world and they are gathering the kings of the earth together to make war against the anointed of the great God when he appears in the sky with ten thousands of his saints.
The situation was prophecied and the prophecy is being fulfilled.

They're still going strong. Jews, Muslims, and Christians worship as they have for ages, and many pagans worship the Greek, Roman, Celtic, and Norse deities. Plus there are countless native religions, like that of the Native Americans, that have changed little over the years.

The ancient religins did not end. For example I know a number of people that follows several of them. I myself, along with several of my fellows folow the Asatru religin, that of the ancient Norse Deities. I have, over the years known people that followed the Egyprtian, Greek, Roman, Celtic, Aztec and a number of others.
Admittedly these religions went into a period of obscurity for many MANY centuries in order to survive, but they never died.

Who's to say they were wrong and misguided? Who's to say the Greek Gods dont exist? If they believed in their Pantheon with all their hearts, it seems to me that they weren't misguided at all.
(Oh, and the ancient religions havent entirely died out, the Greek pantheon lives on in hellenic neopaganism)
