CURRY CHICKEN WITH PB
Chicken (I use 2 boneless breasts)
oil
1 T salt
1 T curry powder
1 onion, sliced
1 tomato, sliced
1 green pepper, sliced
1/4 c. PB
Brown chicken in oil, remove from pan. Stir in salt and curry 1 minute. Add vegetables, cover, stir occasionally for 5 minutes. Put chicken on top of vegetables, cover, cook 30 minutes until chicken is done. Remove chicken to bed of rice. Stir PB into vegetables, heat just to boiling. Thin with water if too thick. Pour over chicken. Serve.

No Bake Cookies
2 c. sugar
1/2 c. cocoa
4 t. butter
1/2 . milk
1/2 c. peanut butter
1 t. van.
3 c.oats (not cooked)
Place sugar, cocoa, butter, and milk in a saucepan. Bring to a boil, stirring mixture continuously. Add the peanut butter, van., and oatmeal. Stir well and remove from the heat. Drop by teaspoonfuls onto wax paper. Let cool and harden.
2 1/2 to 3 doz.
Yummy and easy! Taste like candy!

PEANUT BUTTER BUTTERSCOTCH COOKIES
1 cup peanut butter
1/2 cup Nestles Butterscotch morsels
1 cup sugar
1 egg
1/4 teaspoon vanilla
Combine all ingredients. Form dough into balls. Place on a cookie sheet. Press with a fork to flatten.
Bake in a preheated 350F degree oven for 10 minutes, watching carefully as you do not want to overbake or the cookies will be dry.
Remove to cool on wire racks. Store in an airtight container.
This recipe works well with chunky peanut butter, but a nice variation is to use Reese's Peanut butter, omit the butterscotch morsels, then dip the cooled cookies in Baker's dipping chocolate. It's a fun and easy cookie recipe for the kids!
PEANUT BUTTER MARSHMALLOW PINWHEELS
3 cups sugar
1/2 cup light Karo syrup
1/2 cup hot water
2 egg whites, beaten until stiff
1/4 tsp. vanilla
peanut butter - 1 jar (maybe less - it depends on how much you like peanut butter)
I love this recipe. I used to buy candy like this in Kentucky gift shops. It is great, but hard to get right.
Cook sugar, Karo syrup and water in medium sized boiling pan on medium-high until mixture begins to form small balls. When you pull out the spoon, the mixture is very stringy. Remove from heat.
While mixture above is cooking, begin beating 2 egg whites and 1/4 tsp. vanilla in a large bowl with mixer until stiff peaks appear. Let set until sugar mixture is ready.
Begin pouring sugar mixture into egg whites very slowly as you continue to beat with the mixer. Once all of the sugar mixture is added, turn off the mixer and stir by hand. Continue stirring the mixture until it is very hard to move by hand, don't let the mixture get too hard. The mixture should be a little soft (marshmallow like) and a little sticky.
Pour the mixture onto a table coated with butter and a small dusting of powdered sugar. Quickly pat out the mixture and lightly spread it out like biscuit dough with a roller. Don't roll it too thin. Quickly spread peanut butter all over mixture. Roll up log quickly, might still be a little sticky, just pat the log with powdered sugar as you roll it up.
Let the log sit and cool down to room temperature, then cut into pinwheel slices

These are my favorite peanut butter dessert recipes.
Crunchy Fudge Sandwiches
6 oz, butterscotch
1/2 c. peanut butter
4c. rice crispies
6 oz. chocolate chips
1/2 c. powder sugar
2 T. butter
1 T. water
Melt butterscotch chips with peanut butter over low heat, stirring until blended.
Stir in rice crispies. Press 1/2 of mixture in a 8x8" pan, and cool. Melt remaining ingredients together. Spread over cooled mixture. Top with rest of rice krispies mixture. Chill and cut into bars.
RITZ CRACKER FUDGE-cooks.com
2 c. sugar
1/2 c. evaporated milk
1 tsp. vanilla
6 rounded tbsp. peanut butter (smooth or crunchy)
23 Ritz crackers, rolled fine
In saucepan bring sugar and milk to boil. Boil 3 minutes. Take off heat and add peanut butter, vanilla and Ritz crackers. Pour into a greased 9-inch pan. Cool and cut into 36 squares.
These are so delicious and they make ALOT.
Christmas Crispies
Ingredients:
1- 6 oz. pkg. semi sweet butterscotch pieces
1/2 c. peanut butter
5 cups of Rice Crispie cereal ( i use a generic brand)
Stir the 6 oz. pkg of butterscotch bits and the peanut butter in a pan, over low heat, until the butterscotch melts. Then pour mixture over the cereal and stir together gently. Drop by teaspoons onto wax paper. Chill for two hours or over night.
(Ntimid8r's Note: Remember to place on wax paper.)
ROCKY ROAD FUDGE- Family Fun Magazine
1- 12 oz. package chocolate chips
1 c. crunchy peanut butter
2 c. mini marshmallows
----Melt the chocolate chips in a double boiler or heavy saucepan and stir in peanut butter until blended. Remove from the heat and fold in the marshmallows. Spread the mixture into a 9- by 13-inch greased baking pan. Cover and chill until the candy firms up (about 10 to 15 minutes.) Cut into 1 1/2- inch squares. Makes 4 dozen pieces. Crisped Rice Crunch: For a peanut- free version of this candy, simply substitute 1 cup of crisped rice cereal for the crunchy peanut butter.

PEANUT BUTTER CHICKEN
4 to 6 large boneless chicken breasts.
1/2 cup peanut butter.
1/2 cup flour
1 cup seasoned bread crumbs.
1 TBSP cayenne pepper
1/2 tsp fine black pepper
1/4 tsp salt.
1. mix flour, bread crumbs, cayenne, blk pepper and salt in mixing bowl.
2. moisten chicken and coat well with mixture.
3. fry chicken in skillet in you favorite oil until done a golden brown.
4. Drain all oil out of skillet add peanut butter to skillet and melt. Heat until out, but not boiling.
5. Slice chicken into small pieces. re-dredge in flour mixture and add to skillet with peanut butter. Cook until chicken is done.
6. May be served with a variety of veggies.

"Buckeyes" aka Peanut butter balls. You roll the peanut butter together with some other ingredients (I'm not sure what exactly w/o looking) and then you dip them in melted chocolate chips and they are AMAZING!

this is no fancy shmancy recipe, but it's one I use every morning! Make good old fashioned oatmeal with whole milk, and then, stir in lots of creamy, natural peanut butter. add some cinnamon and honey, and delicioso! hope you enjoy it as much as I do! oh yeah, adding raisins makes it even sweeter! :]
