I made a pot roast for dinner, I put it in the crock pot all day so it is very tender and falling apart. I need ideas for the leftovers. I'm tired of making hot roast beef andwiched or beef and noodles with my beef leftovers. Could you please give me some ideas. Thank you!

Shredded beef can be used for lots of things, including the ones you mentioned:

roast beef sandwiches (I use a little gravy and mashed potatoes in mine to make them moist)

stir fry

fajitas (I add taco seasoning and reheat them w/ onions and green peppers)

enchiladas (just make sauce and shells with cheese, sauce and shredded beef or pork)

shredded beef or pork over rice

taquitos

tostadas (shredded beef/chicken/pork over salad and beans in tostada shell)

You could make roast beef hash. Just chop up all your leftovers and give them a quick fry. Add in some of the au jus. No need for oil in the pan.

Veg. beef soup
Cook mixed veggies in crockpot with a can of tomatoes and the bef broth until veggies are tender. Add chopped beef and continue to cook until beef is heated through.

Get tortillas....
Take the meat and shred it, add picante sauce and maybe some canned diced mild green chiles and heat it up in a skillet... add water if you need to, to keep it moist, and serve it in tortillas. Maybe add some jack cheese.

You can also take a can of pinto beans (not refried, WHOLE pintos, drain and saute chopped onion, mild green chiles or jalapenos, and chopped tomato.... when the veggies are tender, add cumin and the beans and heat through. Either add this to your burrito or eat as a side dish of frijoles with a twist and you have a Mexican fiesta!

beef pot pie

buy a pillsbury crust
in a bowl, throw together left over meat, throawed frozed vegeables, maybe some left over potatoes, and some canned gravy
put mixture in pie crust, put top of pie crust on, slit top of crust, throw it into the oven until its golden, 350 degrees
I like to microwave the pie before hand, just to make sure the inside is warm!
