Did he have reporters following him around night and day, recording in the minutest detail all of his utterances? How come we don't have any quotes from Joseph when he saw his bride to be starting to puff up, and he knew he hadn't caused it?

Well, it's possible, that like the other great prophet that I will not name, it's possible that Jesus related all his sayings to hundreds of scribes that memorized them and much later wrote them down on pieces of bark, or sticks, or animal hides, in bits and pieces. And that years and years later these were all gathered up and put together and were miraculously the exact word for word of Jesus.
Of course we know that Jesus could actually read and write and that some of his followers could also, such as Matthew the tax collector; he had to know how to write and Luke the physician had to know how to read so maybe that's how it came about.

From the Biblical account of Joseph finding out that his betrothed was pregnant, it's possible he did not want his thoughts or words recorded for posterity. He wasn't happy about it at all. Not at first.

The easy one is Joseph, whatever he said was not considered important for the faith. The rest is harded as the gospels were written second hand and most likely at least 70 years after his death.
