"Pink" Pasta Sauce:
Combine equal parts alfredo and marinara sauce (classico makes the best alfedo sauce, bertolli makes great marinara), add 1 tbsp garlic powder, 1 tsp basil, 1 tsp oregono, 1 tsp italian herbs, and pepper to taste, put on low-med heat and let simmer
dice one onion and one green pepper, saute in pan with olive oil, add diced chicken (i'd say probably about 2-3 breasts worth if its for 3 of you) , cook till chicken is fully cooked, add to sauce (with the green pepper and onion), let simmer for about 10 mins, serve over pasta noodles
this is one of my favorite meals and its really quick and easy

I was at the dent-and-bang store this afternoon, and got some broth for $1.19 per 46 ounce can.
I stopped by the oriental grocery on the way home, and picked up a HUGE package labeled "rice stick". What it was, was a pound of oriental noodles.
My wife opened up the broth, poured it into a pot, and added dried vegetables to it (sold in the spice section), and heated the broth up to a boil, then dropped in noodles.
Quick noodle soup, without all the salt of those ramen noodles. It wasn't quite like getting a bowl of pho at the vietnamese noodle house, but it was easy, and good eating. I also had a brand-fresh loaf of bread from the italian bakery down the street, and the dog and I enjoyed bread and butter with it. (My wife doesn't like crusty bread.)
I can't guarantee whether your dad and brother will enjoy it, though, even though I did.

Meatloaf
1 and half pounds ground beef
1 packet onion gravy seasoning
1 cup breadcrumbs
1/2 cup milk
an egg
a half cup shredded cheese
1 chopped onion.
Mix it all together. Throw it in a loaf pan or a 9x13 inch pan (you'll shape it like a loaf). Cook it at 375 for 45 minutes or until done.
Serve with instant mashed potatoes and green beans.. YUMMY

Make chicken quasedillas.
Dice up boneless/skinless chicken breast, when done add an envelope or two of fajita seasoning, you can add in diced onion and peppers if you like them.
In a hot fry pan put some oil, place a tortilla down, add in chicken and cheese, fold tortilla over, fry one side, flip and do the other. Serve with sour cream, diced tomato and your favorite toppings.
