Something light will be nice!
Say Noodles, Spaghetti, or Marcaroni served with plenty o pepper without much oil though!
You might want to cut down on the fat intake.
drink a good glass of water and wash everything down with a cup of coffee?

VEAL SCALLOPINI

2 lbs. veal scallops
1 lb. mushrooms
2 cans (14 1/2 oz.) tomatoes
1 med. onion, chopped
3 cloves garlic, minced
1 stick butter
1/2 tsp. oregano or tarragon if you prefer
1 c. Parmesan cheese, freshly grated
1 tsp. salt
Freshly ground black pepper
2/3 c. white wine
1/2 c. flour

Wipe the scallops of veal clean and place between sheets of waxed paper. Pound with a mallet or the flat side of a cleaver until they are 1/4 inch thick. Shake the cutlets in a paper bag containing flour, 1 teaspoon salt and fresh ground pepper.
Heat 1/2 of the butter in a skillet and saute the mushrooms gently until they are golden. Then add onion and garlic (either finely chopped or put through a garlic press.) Continue cooking until the onion is soft and golden. Add tomatoes, white wine, salt to taste and oregano; simmer, covered for 30 minutes, stirring occasionally.

Heat the rest of the butter and cook the scallops rapidly until they are lightly browned on both sides. Return all veal to the skillet and add the sauce. Let simmer, covered for five minutes. If the sauce becomes too thick, add a little chicken broth or beef broth. Sprinkle with 1/2 cup of the Parmesan cheese just before serving. Pass the rest of the Parmesan cheese to put on the scallopini as desired.

Serve with oven fried potatoes or spaghetti.

bake a chicken and cut it for your dinner and save the rest. have a potato baked in the same over but not the same pan. add a microwave frozen vegetable.

Next day cut some of the leftover breast for a chicken salad.

put the rest of the chicken with the bones and 2 bullion cubes into 8 cuprs of water. boil 5 min. remove from water , skin it and remove all bones, cut it up and put it back into the water. add leftover vegetables, and an onion, and 1 tablespoon dill weed and a swig of rosemary. bring to a rapid boil add a cup of rice and cook until rice is done. great soup. serve with a side salad and bread.

Easy dinner tonight: Fry up some Italian Chicken sausages whole along with sliced thin peppers and onions, melt some provolone or mozzerella on top and stick in a whole wheat toasted bun. Open a package of Alexia organic frozen french fries, cook them as directed in oven and you got yourself a pretty good meal.

Tonight is Tandoori Chicken, its a recipe that came with our George Forman grill, hopefully it is as delicious as it is in Indian restaurants. Other meals I'm making this week are Dijon chicken, chicken parmesan, penne primavera, plain old spagetti and marinara (ragu!), some frozen breaded Tyson chicken tenders, and whatever leftovers are left from those meals. Wow, I just realized we're eating a lot of chicken this week...

You can search by ingredient, like "chicken" and you may get 200 recipes, but people give there ratings after they make them. I use it ALOT, just to find new things. I felt like I was making the same thing all the time.
