Chinese Steamed Pork Buns! Dim sum. My favorite Asian meal is the Mongolian Fire Pot. It is a fondue type meal where a ring of hot chicken stock sits on a mini volcano. It can be served with meats on top as a presentation but our plan is to bring it to the table with a few dozen cherry-stone clams in the broth. The appetizer. Then you have platters of thin sliced fish, chicken, beef, shrimp and whatever else you like. On the table each diner has a bowl of rice and a bowl of dipping sauce. You use little brass baskets and cook your own meats in the boiling broth. The broth is replaced as it evaporates (and gets stronger) and of course bits of meat is lost in there. Once the meats are gone, fresh chopped spinach and cellophane noodles are added to the broth soup and this is ladled out for a final course. This also referred to as a Chrysanthemum Fire pot and is served with the flowers floating in it.

Clams in black bean sauce. It's savory, garlicy and gingery. Also, good with pork spare ribs. If you want to go vegetarian, green beans in black beans sauce is also very good.
