Yes. But at the hour mark, add your veggies and continue to cook. If you want to make it really tender, make a mixture of coffee and soy sauce mixed with water and pour over the seared meat before roasting. Cover and follow your normal directions. Because of the color of the coffee and soy sauce, it makes your gravy a very rich brown as well as tenderizes the meat.

chuck id tough meat so it should be cooked at least that long if it is small pot roast. If making stew maybe less pending on the size of the meat cubes. In either case be sure to have liquid to cook with and not a dry heat. MMM tender with time. Check after an hour with a fork. When it can slide off the fork without effort. its done.

Chuck is a very tough piece of meat suitable for low and slow cooking like stew. Spend a little money and get a good steak you can eat rare-medium .Very fatty also.

I wouldn't even try to put it in the oven, you should braise, stew or casserole in bite sized chunks and an hour would probably do. Stir regularly.
