I would go with the Rider-Waite deck. But as for the course, forget it. and throw out the darn book too. Study the cards themselves, let THEM speak to you and let THEM determine their OWN meanings. Nothing upsets and person being read than having the reader flipping through a book to find all the meanings. Just study the cards beforehand and then during a reading simply concentrate on the card and it's relationship to the others in the spread and let THAT be your guide. Let the CARDS do the reading for you and YOU just interpret what the cards say by letting them speak through YOU. Believe it or not, that is exactly what ALL the best Tarot masters do and it really WORKS.

Here's a resource to see samples and read up on HUNDREDS of decks.
I strongly recommend however that you pick a deck that is related to the Rider Waites-Smith deck, as it is extremely likely your class' structure will be based around that. A non traditional deck such as Osho, while beautiful, will be harder to use for a class.
My favorite decks for beginners / deep, foundational study include:
*The World Spirit Tarot (which includes an exceptional LWB Little White Book)
*Universal Waite-Smith
Considering your profile - you might want to look at DruidCraft Tarot too.
However find one that is comfortable for you. :)

Waite is a good deck. But I prefer the Spiral Tarot... it's been the one I have connected the most with.

my favorite tarot book is 'tarot of the bohemians' by papus. it's a very old text translated from french that goes deeply into the symbolism in the cards. it can be obtuse, but it's one of the few books i've found that treat the tarot as a spiritual guide rather than just a divination tool. it's in the public domain, so you can download it from encyclopedia mythica. [you'll have to google, i've been downgraded to dial up, and never managed to put them in my bookmarks.]
the thing i find troubling is that waite switched the 8th and 11th arcana. perhaps this works for divination, but spiritually, it disrupts the progression of the cards. one of my many to-do's is to decipher the spiritual message in the tarot. i'm thinking it will take many incarnations.

I used the Rider Waite with great success for many years. I currently use the Norse Tarot deck and have had considerable success with that one as well.

with the Waite deck you cant go wrong. but if youre looking for something a little more direct, i would go for the Thoth deck and the book which comes with it. if youre looking for something more esoteric, take a look at the Elemental Tarot. just get a good book and a deck which jumps out at you and start casting. thats the best way to learn

I have the Robin Wood deck, myself. It's been fairly useful. (And the imagery is both beautiful and descriptive.)
But I also have the Inner Child Tarot, to use when I'm just practicing or playing.
