one course, eh...hmm, well you can have the smoked salmon and add some peach salsa on top, makes a pretty plate too!
I think some good fresh spinach (sauteed) ...
and maybe some creamy parmesan risotto
yum yum, simple yet formal

if you want to really blow your guests away...get some scallops and wrap those suckers with the smoked salmon (if it's thin enough)....mmmm delizioso!!

Smoked salmon can be pretty strong for a main course unless it's IN something so that the person doesn't get too much of it. I'd put it in an Alfredo Sauce and serve it over noodles. It's very very simple to make Alfredo sauce - that's why I could never understand why they charge so much for it in the restaurants.

First bring water to the boil and add your noodles. Cook exactly 10 minutes and drain.

ALFRED SAUCE (this serves 4 people)

Melt butter in a pan (1/2 cube). Once it's melted, stir in half and half or whipping cream (unwhipped). Add white pepper (black if that's all you have) to taste (like 1/3 tsp) and garlic powder (1/2 tsp). When it's almost at the boil, add shredded Parmesan cheese (not from the green can) about 1/4 cup. Stir and add the noodles. It will continue to thicken and attach to the noodles within 15 to 30 seconds. If too thick, add more cream and stir. Add your salmon and lightly stir to coat. Once the salmon is warm. Serve. This whole process for the sauce takes less than 10 minutes so be ready with the rest of the meal. I would start the sauce at 5 minutes on the timer for the noodles. That way the minute the noodles come out of the water, they go right into the sauce. Just make sure they are well drained. The noodles will continue to cook in the sauce - that's why you don't want them "done" in the water.

only as an appetizer. Very nice in Belgian Endive with a few capers & slice of vidalia onion. Simple & clean

Add some cherry chutney sauce, serve with boiled parsley red skin potatoes, veggies and bread...Also a nice wine with it... merlot comes to mind...

You need a smoker do you have one?? I dont believe that if you did you'd be asking????????Are you asking for a recipe?
