I have left over corned beef from the other night and would like to use it up. Does anyone know a really good recipe for corned beef hash?

Corned Beef Hash Recipe

1/2 stick unsalted butter
2 cups small diced yellow onions
Salt
Freshly ground black pepper
1 tablespoon chopped garlic
1 1/2 pounds corned beef, chopped
1 1/2 pounds Idaho potatoes, peeled, small diced and blanched

Preheat the oven to 400 degrees. In a large oven-proof skillet, over medium-high heat, melt the butter. Add the onions. Season with salt and pepper. Saute until golden, about 4 minutes. Add the garlic and corned beef. Continue to saute for 2 minutes. Add the potatoes. Season with salt and pepper. Continue to cook for 4 minutes. Remove from the heat. Using the back of a large spoon or spatula, pack the mixture firmly into the pan. Place the pan in the oven. Cook for 8 to 10 minutes or until golden brown. Remove from the oven and slice into individual servings.

It's a simple dish really.
I chop up my meat,pot roast works well too as a hash,and set it aside. Too chop up an onion and set aside.
I cut my potatoes into small cubes and parboil them in salted water...say for about 5 minutes and drain them. I always make sure that they have a chance to cool down. This helps make 'em golden brown when they're fried.
I fry my potatoes in olive oil till they start to go golden brown and then pop in the chopped onion. Finish frying till the potatoes and onion are both cooked.
Pop in the cubes of meat and cook till it is all heated.

I don't make corned beef hash. It gives me indigestion, but I think it comes from the cow that way and they put it in a can. If you have extra anything, you throw that in there too. With catsup it's Italian style. Oh, I wish my wife was back.

All I ever do with it is add an egg and cheese and eat it with ketchup!
