I would recommend a preserve over a jam like a fruit only, no sugar added. That way it isn't too sweet.
Chicken, if you're covering it with sauce you won't be able to see if the juices run clear or not so about 15-30 minutes depending on how much you cook it on the grill and the size you cut the pieces. The easiest way is to check it with a thermometer.

By the answers you already have, it sounds like your chicken question is answered. On the cake, make sure there are no seeds (in case your mother-in-law has dental issues) and mix the jam in with some of the frosting you are using for the rest of the cake. Meaning, take the part you want in the middle, add the jam to it, stir it up, and spread it between the layers. Don't add it to the part you want to spread on the tops and sides. That way it won't be too sweet if it does have sugar in it. Just add enough so you can see it in there and taste it. (for 1 cup frosting add 1/2 cup jam or preserves so if you use less than 1 cup on the inside, then cut down the jam quantity)

You can use regular jam for the cake or preserves depending on what flavor you want but make sure to get seedless. For the chicken I normally do about 350 for 20 minutes in the oven, but I use a meat thermometer to make sure it is cooked thoroughly. It sounds like you have a good game plan and I'm sure that everything will turn out great.

On the cake be sure to put A ring of frosting on the very edge of the bottom layer so your jam or jelly doesn't leak out.
