Here are two recipes for you. I like them both. The one without noodles is from my grandmother who lived to 101 yrs old.
IMITATION CRAB MEAT SALAD
1 lb sirimi (imitation crab meat) - torn into pieces
1/4 yellow onion - diced
1 stalk celery - diced
4 radishes - diced
1 medium carrot - diced
1/2 head lettuce (either iceberg or Romaine) - shredded
black pepper to taste
Mayonnaise (apx 1/3 cup)
Milk (apx 3 T or more)
1/2 tsp sugar
Place everything in a bowl except the black pepper, mayo, milk, sugar and crab meat. Mix together the black pepper, mayonnaise and sugar. Add the milk to thin it - you just want to lightly coat everything in the bowl - don't want it thick and blobby. Stir well. Spoon a little of the dressing over the salad and stir in. Add a little more until you have everything just lightly coated. Then add the crab meat and stir it in just until incorporated and coated. Serve on a slice of lettuce. My grandmother fixed this often.
IMITATION CRAB MEAT NOODLE SALAD
1 lb imitation crab meat - torn into pieces
1/4 onion - diced
1 stalk celery - diced
1 medium carrot - diced
1/4 red or green bell pepper - diced
4-5 radishes - diced
1 c uncooked elbow or shell macaroni
4-5 Roma tomatoes - diced
Mayonnaise (1/2 - 3/4 c)
Mustard (2 tablespoons)
2 tablespoons pickle relish (sweet or sour - your choice)
3/4 tsp curry (optional but I like it)
salt and pepper to taste
Bring water to the boil and add your noodles. Cook exactly 8 minutes, drain, rinse in cold water and drain again. Put the onions, carrots, celery, bell pepper, and radishes in a bowl. Mix together the mayonnaise, mustard, pickle relish, curry (optl), and salt and pepper to taste. Pour your noodles into the bowl with the other ingredients and pour in the mayonnaise mixture. Mix well. Add the tomatoes and mix well again. (The juices from the tomatoes will thin the salad dressing). Add the crab meat and stir just until there is crab meat throughout the salad. This salad is also good with smoked salmon. If you have a milder smoked salmon, add more than you would with a stronger smoked salmon.

Depending on how many people will be served, you can buy a 1 pound (or more) pack of imitation crab meat at your local grocery (seafood-cold section).
The imitation crab meat comes in short 1-inch long tube forms or small round pieces. You have to press or mush the pieces to separate the "fibers".
Once this is done, take a pinch or two of salt and sprinkle over the crabmeat. Then take about 1/2 to 3/4 cup of mayonnaise.
Mix everything throughly.
Adjust amount of salt to fit your taste.
Add more mayonnaise as needed.
Line a large bowl with a lettuce leaves.
Place crabmeat salad over lettuce.
Serve.

1/4 cup sour cream
1 1/2 cups mayonnaise
2/3 cup Italian-style salad dressing
2 tablespoons lemon juice
1/2 teaspoon dried oregano
salt and pepper to taste
DIRECTIONS
In a large bowl, combine onion, green pepper, celery and imitation crab meat.
In a separate bowl, mix together sour cream, mayonnaise, salad dressing, lemon juice, oregano, salt and pepper.
Pour the dressing mixture into the crab/vegetable mixture and toss lightly to combine. Cover and chill at least 2 hours before serving.

Make a simple noodle salad and throw the crab into it.
Noodles (1 box shell)
2-3 cups mayo
pepper (add to taste)
pickle relish (1/4 cup)
4 stalks celery cut up
1/2 onion cut up
cook the noodles, drain and add the rest of the ingredents, add pepper to taste and then add your crab meat. Let cool in fridge for 1 hour.
You can use any noodle salad recipe and add the crap meat to it

The surimi used in the manufacture of imitation crab meat is most commonly processed from the Alaska pollock or walleye pollock. To a lesser extent, the New Zealand hoki is also used. These fish are particularly useful because they are abundant, have little flavor, and are inexpensive to process. Other fish that have been used include the blue whiting, croaker, lizardfish, and Pike-conger.

CRAB (IMITATION) SALAD
1 pkg. imitation (frozen) crab meat (chopped)
1 med. onion, chopped fine
1 med. bell pepper, chopped fine
1 tsp. parsley flakes
2 stalks celery, chopped fine
1 clove garlic (or garlic powder)
Seafood seasoning (McCormick's), to taste
Salt to taste
Sweet or dill pickles, chopped, to taste
2 boiled eggs, chopped fine
2 c. leftover Kraft dinner (already cold - completely fixed with cheese, etc.)
Mayonnaise
1 tsp. mustard
3 tbsp. Italian dressing (approx.)
Note: The longer this marinates together, the better!!
Combine all to consistency of a "lumpy" potato salad, add Italian dressing before mayonnaise, as to not get too watery.
Serves 4-6, depending on hunger. Very good alone or with fried fish or boiled crawfish as a side dish

Add 1/2 cup of mayo, 1/2 cup of sour cream. add green onions, celery, fresh parsley, lemon, pepper, salt, and curry powder. Comes out great. with my salad , I add some cooked shrimp to make it more of a seafood salad.

Mix it with some mayo/miracle whip, add in onions and celery if you like. You can add in some shredded cheddar and some boiled egg white. Serve on top of lettuce, or with crackers, or on bread.

Just boil some pasta shells, mix in some mayo,salt, and pepper, and add some chopped red pepper...put your crab in, and chill it. You can add whatever you want to...like more veggies, spices,etc..
