I have the best one for you!
It's really easy too.
Slice potatoes and sweet potatoes (both) and layer them with cheddar cheese and a small amount of finely diced onions in a baking dish. The original recipe I have calls for Guyure cheese with the cheddar. The Guyere is expensive but adds a lot. When you have a dish full of potatoes and cheese (use A LOT of cheese) pour about a cup and a half of chicken stock over it, and cook it uncovered for an hour on 400 degrees. Or until potaotes are soft. It's called 2 potato Gratin. My wife and I love it.

3/4 bag frozen cubed frozen hasbrowns
1 can cream of mushroom soup
3/4 cup sour cream
2 tbsp butter
1 1/2 cups cheese (chedder, colby jack are best)
1/2 tsp garlic salt
Melt butter. Mix in soup, sour cream, cheese and garlic salt till well mixed. Mix in the potatoes until coated. Pour into a 9x13 greased pan and cook 375 for about 45 minutes. I sometimes pull it out about 5 minutes before and put cheese over the top with some italian breadcrumbs over the cheese and cook another 5 minutes! I loved this when I was pregnant!

Boil the potatoes until they are nice and soft, as if you're making mashed potatoes. Dice the potatoes and put them in a frying pan with vegetable oil. Once they become golden brown, turn off the heat and add cheese on top to melt.
You could also make some mashed potatoes and add cheese to the top.
OR, you can get REALLY crafty and make twice baked potatoes. Bacon would be a nice add on here....or even broccoli....or ham...lol.

broccoli cheese potato soup.
cube the potatos, chop the broccoli up fine, cut the cheese into slices or chunks.
put it all into a pot, add milk and a little butter, cook until cheese is melted, you can mash up some of the potatos if you like.
also,
cheesy fries
slice three or four potatos into strips
put them into a ziploc bag or a container w/a lid
add to the bag/container 2T canola or olive oil, 2T red wine vinegar, 1/2 cup white sugar, 1/4 cup brown sugar 1t of salt, 1/2 t of pepper, and any other seasoning you like on your fries (i enjoy a dash or 2 of cayenne pepper for a bit more spice)
shake the bag/container to entirely coat the fries.
bake in a single layer in the oven at 375 for about 15 minutes (until fries are tender)
remove from oven, place a serving on a plate and sprinkle a generous amount of cheese over them (the heat from the fries should melt the cheese quite nicely)

CHEESE POTATO BAKE
6 medium potato
8 ounces cheddar cheese, grated
1/2 teaspoon garlic salt
1/4 teaspoon pepper
1/2 teaspoon salt
1/4 cup cooking oil, or as needed*
Wash potatoes but do not peel. Cut into 1/8-inch slices. Lay on greased cookie sheet, overlapping one another until full. Sprinkle grated cheese over potatoes then sprinkle with the garlic salt, pepper and salt. Pour cooking oil over all. Put in 350 F. oven and cook until cheese is melted and potatoes are done. Serve hot. Cook about 20 minutes or more.

This recipe has cheese and potatoes as well as other ingredients and it's a very good dish. Everyone loves it.
CALIFORNIA POTATOES
32 oz. shredded hashbrowns
1 lrg. onion
8 oz. sour cream
1 can cream of mushroom soup
1 can cream of chicken soup
2 cups shredded cheddar cheese
1 stick butter (melted)
salt and pepper to taste
Break up hash browns, chop onion and add to potatoes. Mix in all other ingredients. Put in a 13x9 inch pan. Melt another stick butter and mix with 1 cup or more crushed corn flakes. Put on top of potato mixture. Bake at 350 degrees for 45 minutes. Enjoy!

i make cheesy potatoes.
peel (or not) and then cut into however you like your potatoes. par boil the potatoes. when they are about 10 min from being done, drain.
in a baking dish, put some dabs of butter and a little milk, the potatoes, and then throw the cheese on top.
i always put a little more butter (dabs) on top and maybe some bread crumbs. then put in a preheated 350 deg oven for about 10-15 min til taters are done and cheese is gold & bubbly!
don't forget the salt!

cheesey jacket potatoes!
wrap a potato (unpeeled) in foil and bake at 375 for an hour until soft, scoop out some of the flesh, then mash that with some butter, sour cream, cheese, scallions, and other cooked veggies then use it to re-fill the potato, top with more cheese and put it under the grill until the cheese goes bubbley and golden! yum!

1 Pkg of Frozen Diced Hash Browns
1 can cream of mushrom soup
1/2 can of milk (use the soup can to measure)
1/2 small chopped onion
(You can also add some green pepper if you like...I don't like)
2 cups shredded cheddar cheese
Mix tateres, onions and Cream of Mush soup, 1 cup of the cheese and place in a casserole pan...add just a little bit more milk to moisted if needed...and bake in preheated oven @ 350 for 20-25 minutes, remove and add remaining cheese to top and return to oven for about 10 minutes of until cheese is melted.
P.S. I'm new here...but I've been cookin forever!!!!! WhenI was pregnant, I had cravings for mashed tarers and brussel spouts...had to din the sprouts in the tarters..I lived on that and Chocolate milk with ice in it for 9 months...I swear!!!!

cut the potatoes up really small, diced like in home fries (or just use a bag of frozen home fries - you need about this much for this recipe anyway), and then mix them with a can of cream of celery soup, 1/2 can of milk, some cheese, a dollop or two of sour cream if you like that and any herbs and spices you like and bake them for about an hour at 375. this is such an easy dish and good with anything.
