Mexican Casserole
1 lb hamburger browned and drained
1 chopped onion
shredded cheese
taco seasoning
1 can of corn
corn bread dough
mix taco seasoning with meat using 2 tablespoons water to help coat all the meat
pour meat into casserole dish
add onions
add corn
cover with shredded cheese
top with corn bread dough and bake at 350 for about 20 minutes or until corn bread is golden brown
serve with salsa and sour cream
a salad on the side rounds out the meal

I made this the other night and although my family was speptical they loved it.
Bisquit enchilada casserole
indgredients:
1 tube of biscuits
1 lb. ground beef
1 can enchilada sauce
1 cup shredded cheese
1/4 cup green pepper
1/4 cup red pepper
1 can sliced black olives
1 can mushrooms
any of the veggies can be substituted, I added onions to mine
preheat oven to 400 degrees
pour enchilada sauce into a 9x13 baking dish add the seperated biscuits turning them over so that each bisquit is coated on all sides, top with olives and 1/2 cup cheese, bake for fifteen minutes.
while the bisquits are baking cook hamburger and veggies until done. (drain)
when bisquits are done add the hamburger mixture and top with remaining cheese put back into the oven for 5-7 minutes until the cheese has melted and the sides are bubbly.
Surprisingly my picky hubby loved this and all he added was a little hot sauce.

I received this recipe many years ago from my Indonesian-Dutch neighbors and have used it many times. Kids love it. It's a stew with the hamburger in it - a simple one - and if you really want to be creative, either make bread bowls from scratch or buy the frozen bread dough and shape your own from that. It's very good in the bowl and then you eat the bowl!! Here's the recipe:
ROTMOK
1 onion - chopped
2 T oil
3 carrots - chopped
2 potatoes - chopped
1 can kidney beans - drained (& rinsed if you want less salt)
1 can green beans - drained (same here)
1 can peas - drained (same here)
1 can condensed tomato soup - undiluted
1 lb ground beef
salt and pepper to taste
Fry onions in the oil until translucent. Add the meat, broken into "clumps" and cook until no longer pink. Drain all but 1 T juice. Add the carrots and cook 2 minutes. Add the potatoes and cook until the carrots and potatoes are tender-crisp. Add the kidney beans, green beans, peas and soup and stir. You might add a little water if it doesn't easily coat everything. Add salt and pepper to taste. Cook until everything is hot. Serve with bread and butter if you don't use a bread bowl- very good to wipe the plate clean.

i am making stuffed green peppers tonite
4 large peppers, cut lengthwise, cleaned out
1 lb ground beef
1/4 cup chopped celery ( i dont have any today so i will skip it)
2 tbsp chopped onion
1 cup cooked rice
salt/pepper
chopped tomato or canned
1/4 cup ketchup
1 can 8 oz tomato sauce (i use spaghetti sauce)
1tsp sugar
1/4 tsp basil leaves
1/4 cup grated cheese for the top during last 5 min. of cooking
oven = 350
cook peppers in boiling water 5 min.
brown beef, celery, onions , add the rest to mix well (reserving 1/2 sauce)
put mixture into peppers
spoon other 1/2 sauce ontop
i like lots of sauce so i add extra
another good one is chinese casserole
brown 1 lb hamburg: drain and mix with the following
2 cup chopped celery
1 cup rice
1 can bean sprouts
1 can mushroom soup
1 cup chopped onion
1/2 cup soya sauce
1 can drained mushrooms
1 cup water
i sometimes add can water chestnuts
bake at 375 for 45 to 60 min.
bake in shallow pan 30 - 40 min.
one more favorite: sweet and sour meatballs
make your balls however you like..i use onion, salt and pepper egg and crackers
mix: 8 tbsp br. sugar
garlic powder
3 tbsp soya sauce
2 1/2 cup boiling water (less pineapple juice)
4 tbsp flour
3/4 cup vinegar
3/4 cup ketchup
2 bay leaves (optional)
1 can drained pineapple tidbits or crushed
mix sall in a pot except pineapple chunks, heat until a little thickened, pour over browned meatballs, add pineapple, bake at 350 1 hour

What about Shepherds Pie? I know some people call it Chinese Pie, but in my family it's Shepherds. :)
Brown the hamburger in a skillet.
Get out a large baking pan and a couple cans of cream corn and sweet whole corn and some mashed potatoes.
Put the browned hamburger in the bottom, then the corn and then cover with the mashed potatoes and then bake it in the oven at 350 until it starts to bubble.
You can even add cheese to the top before you bake it.

STEAK SOUP:
brown 1 lb hamburger meat
take the meat out and cook in the juice:
1 tbs. oil
1 c. carrots, sliced thin
1/2 c. onion
1/2 c. celery
cover and cook till veg are softened, about 5 min
stir in 2 tbs flour and cook 1 min
add:
i can beef broth
i can tomato
i c. water
1 tsp. worchestershire
1/2 tsp. each salt and pepper
return beef and bring to boil
simmer 25 min
stir in 1/2 c frozen peas
2 tbs chopped parsley
i used to use way more peas, and you can adjust flavors however you like of course...but that is the basic recipe

I make this some times and every one really loves it.
Take the ground beef and cook it very well, until there is brown on the bottom of the pan , then add a couple of cups of water and let simmer add potatoes, carrots (cubed is best) and onion and cook till potato is done. Then I add gravy made according to the directions , or use bisto made according to the directions mix around and let thicken and serve with our favorite bread or rolls. Its making me hungry just thinking about it.....

Frito bake. You cook chili, add cheese on top. Pour into a baking pan. Add frito chips sticking out of it(half in, half out) bake at 325 for 10 minutes. When it comes out you use the frito chips kinda like built in spoons to eat the chili. It's so good!
