I made a HUGE turkey and wanna make Turkey a la king...I only ever had it as a kid and need a recipe?

Start with 2 to 4 cups of chopped turkey meat. Melt 1 stick of butter in a skillet, when it's bubbly, whisk in 1/2 cup of flour to make a roux. Whisk in 2 cups of milk (half & half or heavy cream if you want it richer) and 2 cups of turkey broth at room temperature (I like to chill my broth overnight so I can scoop the fat off the top). After it comes to a boil, you made need to add a liitle more milk or broth to adjust the thickness. Add the turkey and whatever kind of (canned or frozen) mixed veggies you like, a couple of cups is probably enough, but you can always add more if you like. Heat until the veggies are hot and serve over noodles, rice, or my personal favorite, biscuits.

For Turkey A La King it's basically a white sauce (equal flour and butter or turkey juice) with sauteed onions, peas, and some people use pimientos for color. You could add green bell pepper if you like that - not really necessary. And you need lots of black pepper. You could also add sage and poultry seasoning if you want but usually those aren't in it. It does give it more flavor.

I'd saute the onions first in oil, add the flour and stir it into the onions. (You don't need the butter or turkey juice if you do that). Then add milk and stir until the milk thickens. If too thick, add a little more milk. Add the frozen peas and the pimientos (and naturally the turkey). Give it a lot of pepper and the spices if you choose to use them. If you are going to use the bell pepper, cook it with the onions. Serve over toast or biscuits.
