My favorite and easiest fish fry is either seasoned (salt and pepper) corn meal or cracker meal. I've also used the commercial fish fry mixtures and some of them yield good results. I don't like batter--it's too heavy for me and usually burns before the fish is cooked. Sometimes if your oil is new, your fish will not brown like you think it should. Many restaurants alternate frying fish with potatoes, because potatoes will help "purify" the oil. It's also best if you use peanut oil since it has a higher smoke point and can be used longer. By the way, if you place the commercial mixture in a generic plastic container, how will anyone but you know it's "not from scratch"?

Our family loves to go fishing, and my husband is good at catching bass and trout during colder weather. We cook our fish all kinds of different ways, and love to fry it during the summer time. One long standing menu with our fried fish is Pea Salad, Seasoned French Fries, Hushpuppies, sliced tomatoes, malt vinegar, and tartar sauce. Following is our recipe for Pea Salad .... YUM!
2 cans petite peas, drained
2 hard boiled eggs, peeled and chopped
1/4 c. chopped purple onion
1 c. cubed colby cheese
3 T. sweet relish
3 - 4 T. mayonnaise, depends on how wet/dry you prefer
1/4 t. dillweed
salt and pepper to taste
Mix all together, sprinkle with paprika, chill several hours.

There is nothing like great fish and chips, but, depending on your tastes. I also like fish and mash potatoes or scalloped potatoes.
