To make dumplings
I boil my chicken.
I either pull the chicken of the bone or if I use boneless then I pull it apart.
I put the chicken back in the pot and let it simmer while I pull bits of refrigerator can bisquits or cresent rolls.
Then I add the bits to the pot and bring back to a boil. Then when the bisquits or rolls are cooked they are done.
My mom and daughter like it best when we add a can of cream of chicken soup
I like without the soup and I prefer the cressent rolls dough for dumplings.
We have also used cut up tortillas (soft taco shells) for dumplings.
They are pretty good.

boil a whole cut-up chicken together with an onion, celery, and carrots. Season well with salt and pepper. Make sure you have plenty of water in the pot to cover the chicken and veggies. Cook this until done, about an hour on medium. Take the chicken out to cool so you can pick it off the bone.
You can make your own dumplings, use the frozen ones, or even use frozen biscuits or flour torillas.
Bring the broth to a rolling boil. Put the dumplings in one at a time in a spot where it is rolling. Let them cook on a simmer about thirty-forty minutes, or until done, stir occasionally to make sure they don't stick. put your chicken back in, taste and re-season. You can add a can or cream of mushroom if more thickness is needed.

Get a chicken carcass (best is from a kosher butcher) and boil for 2 hrs. Season well with salt and pepper. If you want stew, use a whole chicken and boil for longer. While you're in the kosher shop, get some dumpling mix. Follow instructions on box (you need to add one egg). Use 2 spoon to form mixture into balls and pop into stew. Simmer for another 15mins. Serve.
