Grilling salmon would be a healthy way of preparation, but salmon is not necessarily the healthiest fish. Although it does contain essential fatty acids, it is a lot more fatty than other fish.
Try tilapia or any other white fish. Trout and bass also grill very well.

Yes, very. It is high in protein, low in fat and high in Omega-3 fatty acids. Omega 3s are beneficial in numerous ways including lowering cholesterol, blood pressure, reducing risks for heart disease and strokes. There is also significant evidence that these compounds may boost your mood! Wild caught salmon (as opposed to farm-raised) is better because it contains fewer contaminants.
One thing to remember if you're going to grill it yourself, make sure you oil the grill grates very well (and make sure they're clean) or the fish will fall apart when you try to flip it! Use canola oil, peanut oil or another cooking oil with a high smoke point.

Oh yes, as long as it's cooked through. No "rare" or "medium" fish for me - it ALL needs cooked well done to avoid parasites and disease.
