I like my coworker(though we're technically not since we work at different departments of a grocery store), and think he is cute and interesting. I smile, talk with him, and joke a little. The other day he had work, and I didn't, and I even said hi to him and talked with him. He blushed when he saw me(out of my unifrom for once), and I let him know I was upset he would be out all week from work. So basically...what can I improve?

That blush was all you needed to see. He really likes you but has trouble admitting it. when you see him next time do what Random_Answers said,look him up and down and smile a little smile. That will either scare him or make him know you like him. you don't have to work too hard to get a guys attention, most of us are usually hoping that a girl is interested and would let us know it.

You're doing all you can. Now its up to him. If he doesn't ask you out he doesn't want to go out with you.
These types of encounters are almost always just flirtations. Give him a chance to be friendly and then maybe he'll ask. If not, the rejection factor for you is at about 80%. Then the 2 of you will still have to work together!
Obviousness is a big turn off. You have to be nice while acting like it doesn't matter if he likes you. Independence is a big turn on.

Ask him if he wants to hang out sometime, give him your number, if he doesn't use it, then you'll know that he is not interested.
If you're not that kind of person to just be straight, then maybe ask him if he's got an email or something.

well im sure that the comments make it obvious..but i don't see how you think you'd get annoying..
so i doubt you have anything to worry about.
just be yourself...if he doesn't like it..than you dont need him anyways
