Because those creating the Declaration of Independence did not understand that these rights extended to blacks, women, and basically ANY human being on the planet.
Is it true today? Are all free?
Though they are convinced otherwise, many people still perpetuate hate against the homosexuals, those who do not have the same religious belief, and those who choose to abort the flesh of their own bodies before the spirit enters therein. They generate many other biases and prejudices contrary to loving thy neighbor as thyself.
Eventually, the truth shall shake the earth violently, and there shall be no more borders or nations, no religions, no values placed on one human life above another, nor on material possessions; no more families inside picket fences who do not know their neighbors across the street, no more money, no more race, no more inequality. A human will never again be considered a foreigner or an illegal alien, but all will simply be a human—each equally a child of God.

I'm sorry, but what Americans are you talking about that these rights are not true for? It is true that some people have tried to take those rights away from some cultures, races and women. But we have the right to those just like every body else. Every body has the right to live (life) and be free (liberty) and also to find our own happiness (pursuit of happiness).

It is, or should be. I know what you're thinking: why did they say "men" instead of "people"? Back in those days English often used "man" to mean both men and women. It seemed sexist to us in the latter part of the 20th century, so we tend now to assume they really did mean only men and not women. But remember that women were only seen as their husband's partner. Old maids were cared for by their relatives, but the normal unit of an American household at the beginning of the revolution was a man and his wife and kids being represented by the man only in public issues.

I guess no one else gets that when they said "all men" they really meant "free (property-owning) white men". At least for all practical purposes. There were a few idealists who did mean what they said. But it took a long time for the U.S. to get rid of slavery. And much longer to give votes to women and minorities. And even longer to give everyone full and equal protection under the law. It's still a work in progress, really...
