Here is my recipe:
2 eggs
1½ tsp oil
1 c flour
pinch of salt
1 c milk

Crepes do better if you let the batter sit for awhile after you've thoroughly blended it with a whisk or blender. Even with a no-stick pan, melt a little butter at medium heat. Add a thin coating of the batter in the middle of the pan and turn the pan all the way around to spread it out. Each side cooks quite quickly. When the outer edges start to look dry, it's ready for you to turn it over. 2nd side browns more quickly than first.

If you're making more than you're filling as you go, remove them to a baking pan and keep warm in a 200 - 250 F oven. Otherwise, plate as you go, start your second crepe and fill the first as it's browning.

Hmm, Yours looks a simple way to do it, does it come out good? Here's what I follow:

3/4 cups flour
1 tsp sugar
pinch salt
3 eggs, lightly beaten
1 tbsp melted unsalted butter
1 1/2 cups milk

There are so many variations, I would love to try some new ways myself. Has anyone heard of a "Crepin", its a mix between a Russian Blini and a French Crepe. They're delicious, only I have yet to see a recipe for them. I order mine from www.CrepiniCafe.com. Anyone know how to make them?

I use wolfgang puck's recipe

3/4 cups flour
1 tsp sugar
pinch salt
3 eggs, lightly beaten
1 tbsp melted unsalted butter
1 1/2 cups milk

Put all in a blender and let sit for 15 minutes.
Heat a small teflon frying pan and pour 2 oz of batter in it and flip when necessary.
