Muslim boys and girls should not use e-mail with or w/o video camera to develop love affairs. That will be like being alone with opposite sex except they can not touch each other and can not commit physical sin. But this may encourage to meet each other and be together by themselves. It is also OK if they meet in open public place and talk to get to know each other.
If you e-mail professor or even to a male class fellow it is ok as long as you don't do any thing wrong that Islam does not allow. Since you are Muslim, I am sure you know the difference between right and wrong, I don't need to spell out every wrong action.
My daughter was President of Muslim Students Association on her college campus and she had to e-mail male and female MSA members about programs of social/ religious activities and to send information about MSA meetings. But she addressed all members as Sister or Brother.
There is nothing wrong if you use e-mail facility for your educational needs addressing them in the right manner.

As long as the contact and communication does not involve the possibility of mutual attraction which then leads to fornication ........... there is no harm.
Men and women can communicate with each other but as soon as flirting starts the permission is lifted.

It all depends on what you talk about and your intentions.
If you're talking about something haram, then its forbidden, if not, its okay.
Emailing your school professor is all about your studies and stuff, its not personal at all. Its okay.

am with WWJJ: good purposeful speech, without being alone with him in a room. if so, a Hadith states that Satan would b the third partner! (muslim alems said even if he is teaching u Qur'aan u shd NOT b alone with him)

Why is everything have to be about sex in islam, the more it represses the more obssessed you can become, do your business, and what if you have to discuss the reproductive system which is part of biology and you have to discuss with a male professor? Will it be sin again??? Can you think other than sex???
