I had a friend who was staring for hours at the orange juice container. Finally I asked him "What the heck are you doing" and he said "It says 'concentrate'. "

Well,...When the oranges are squeezed, many of them are not yet fully ripened & their juice is quite sour. Still, other oranges are OVER ripened & their juice is then mixed with the other & it is frozen in order to keep for long periods of time & be shipped all over the world! There is nothing that compares to the taste of a freshly picked orange from the tree! But why? Before the juice can be frozen, it must be pastuerized by heating it to a high temperature & this process causes the excess water in the juice to evaporate & IT IS THEN CALLED "concentrate" because you must add the water back into the juice for it to taste the same as it did before it was pastuerized & frozen! The added water restores the juice to it's original weight & consistency!

So they can make more of it.
Like if you want to make like 50 gallons of orange juice for a company party.
Plus it's cheaper, is more compact and lasts longer.

Erm, is this question about food or am I missing something here?
Because it is cheaper to transport if there is less, then they mix it up with water again - and it tastes pretty weird & they sell it as orange juice.

Because it's much easier and cheaper to ship the concentrate. Typically 60 % of the water has been removed. So one tractor trailer tanker equalls three!

Shelf life and space. A gallon of OJ goes bad in 10 days and takes up a big chunk of scarce real estate in your refrigerator. A frozen tube of concentrate lasts for months (until you need it) and takes up a small section of your freezer.

Hehe cute question.... but for several reasons, its easier to ship, doesnt freeze solid like regular juice does so its easy to prepare. It stays fresh longer because it can be frozen. Lots of reasons :)

Those who make it from concetrate dont grow the oranges. They buy the concentrate and put their name on it.

This controls the shelf life and in many cases they may add preservatives, sugars and various other items that will extend the shelf life.
