Today, I am preparing smoked salmon and smoked shrimp
for 20 people......
with.... an brain storm...
the glaze... for the applying after the meat is smoked...
plum/garlic/lime...glaze........

plum preserves, fresh minced garlic, and lime juice.......


what ideas, impromptu things do others come up with on the spur of the moment?

recipes are guidelines .. I use them and any similarity between the recipe and what I serve is coincidental and sometimes accidental

Sometimes I follow recipes because I have a large group to prep for and I want to make sure that I get the quantities right, but I have cooked for so long that a lot of them are memorized. I draw from that when I want to do some creating at home--and frequently those go over so well that I offer them to clients. Here are a few.

Waffle sandwich with orange marmalade, cream cheese and warm bacon inside.

Date and orange sauce with mace and cardamom over ham or pork

Chicken breasts stuffed with chorizo sausage and aged swiss, wrapped in bacon and pan sauteed.

I usually only follow it the first time. After that I think of what I didn't like and what I would change. This usually results in a good adjustment to the recipe.

An example is that the recipe I was using for Belgian waffles called for oil. Since I did not wish to use oil, on a whim I used apple sauce. This substitution resulted in fluffier and healthier waffles!

I create, I don't think I have ever followed a recipe. When the kids were young and we had little money to feed 5 people I came up with cheap recipes that the kids still call today and ask me how to cook. I have added a can of rotel tomatoes to my mac and cheese, I have topped meatloaf with goat cheese.

I follow a recipe once, and then start playing, add ingredients, switching ingredients, what ever i think will make a better impression.
Yesterday I roasted a pork roast in Root beer garlic cumin slat & pepper. Unique and different, everyone enjoyed it, but no one guessed the combination

The first time I make something I usually follow the recipe. After that I start messing with it adding things or substituting ingredients.

when baking, i always follow the recipes...baking is as much chemistry as anything else, and it's almost impossible to improvise 'on the fly'...for 'top of the stove' cooking, i just grab some form of dead flesh and vegetation, rummage thru the spice rack, and away i go!

my mom always makes up recipes.

shes made up atleast 20+ soups, buy changing recipes or making them up completely.

and dinner dishes- mmmm- shes a good cook.

original chef had in mind.

My turn...a little this, not so much that...


and so on.

this is when it's OK to play with your food.
