I saw that episode of Grey's Anatomy. Dr. Stephens saves a deer in the parking lot of the hospital.
I would have quickly and humanely dispatched the suffering animal, then kept the meat and hide, letting as little go to waste as possible.

Save it's life from what? I never purposely would aim my car at a deer, nor would I hesitate to try to assist a deer in a bad situation (hung up on a fence), trapped in mud, etc.
I'm a hunter, and those situations above would not be considered fair chase rules and I would never take advantage of a situation like that. I would certainly harvest a deer that is road kill if I see it killed. That is legal in some states, as long as you report it.
Hunters do not hate deer. Even when I am not in the act of hunting deer I love to watch them and observe them. I respect them as fellow living creatures.
I also think they`re delicious.

Of course I'd save a deer. I'd save lots of deer. And I'd do it by hunting them.
Without hunters, deer would (and in some places, do) reproduce in numbers that their habitat could not sustain. This means that they would die slow, painful deaths by starvation in the winter months, as there would be far too much competition for food.
In some places where this is already the case, deer migrate to more populated areas, where they are frequently hit by cars, killing or badly injuring both deer and people.
Let's face it. As herbivores, deer have a place in the food chain. Deer are little more than food for carnivores--and the deliciousness of their meat is proof of that. The culling of deer populations is natural, necessary and benefits both humans and deer.

I ate deer steaks for dinner tonight. I saved them in my freezer from last hunting season, and still have more. Hunting season is over a month away, and I might run out.

Honestly, it depend on the circumstances. If someone is killing for only sport, and let it rot, then yes. If someone kills more than his/her fair share, then yes. If I knew how to save a deer, yes. If my family was starving, then no.
