Try this, I copied it off the web. Uses lots of crackers and is very good. It is a mock apple pie.

pastry for 2-crust 9-inch pie

36 RITZ Crackers, coarsely broken (about 1-3/4 cups crumbs)

2 cups sugar

2 tsp. cream of tartar

Grated peel of 1 lemon

2 Tbsp. lemon juice

2 Tbsp. butter or margarine

1/2 tsp. ground cinnamon


PREHEAT oven to 425°F. Roll out half of the pastry and place in 9-inch pie plate. Place cracker crumbs in crust; set aside.

MIX sugar and cream of tartar in medium saucepan. Gradually stir in 1-3/4 cups water until well blended. Bring to boil on high heat. Reduce heat to low; simmer 15 minutes. Add lemon peel and juice; cool. Pour syrup over cracker crumbs. Dot with butter; sprinkle with cinnamon. Roll out remaining pastry; place over pie. Trim; seal and flute edges. Slit top crust to allow steam to escape.

BAKE 30 to 35 minutes or until crust is crisp and golden. Cool completely.

Here is one with shrimp that I love.

Title: SHRIMP SCAMPI/RITZ CRACKERS.
Categories: Fish/shellf, Italian
Yield: 6 servings

1 ea Lg Shrimp
1 x Ritz crackers
1 x Butter
1 x Garlic

Directions: Take the shrimp and split them thru the shell as you
would a lobster >>>next tail. That is split them on the rounded part
of the shell. DO NOT REMOVE shell. After they have been split pull
them so that the meat isseperated from the shell and then lay them
back in the shell. ONLY pull till you reach the tail. REMEMBER you do
not want to remove from shell. >>>>>>NEXT Lay all of the opened
shrimp on a baking pan and brush with a mixture of FRESH GARLIC AND
BUTTER. Take a tube of ritz crackers and squeeze them like an
accordian until they are crushed. Sprinkle the crackers on the
buttered shrimp and then POUR GARLIC AND BUTTER over them again
>>>>>NEXT This may be frozen at this point or placed in the fridge.
Place the pan in a 400 degree (f) oven and bake until the crumbs
start to brown.

These are good.

BONELESS CHICKEN BREASTS WITH RITZ
CRACKERS
4-6 boneless chicken breasts
2-3 c. crushed Ritz crackers
1-2 sticks melted butter
Dip boneless chicken in beaten eggs. Coat evenly with Ritz crackers. Place in baking dish. Pour melted butter over chicken evenly and bake until golden and crisp, about 30-40 minutes.

RITZ CRACKERS CANDY
Ritz crackers or Townhouse crackers
Peanut butter (creamy or chunky)
Dipping chocolate
Spread peanut butter between two crackers. Then dip in melted chocolate. NOTE: This tastes like Clark bars or Butterfingers.

Tom2364 has a great answer. When i was a kid my mom used to make Mock Apple Pie with Ritz Crackers. And it really tastes like apple pie.

One year on thanks giving I made a three layer casserole and I used the ritz crackers in all three layers. You can do this with any caserole. After breaking up the ritz put seasoning on top and butter and then add your layer of casserole I put Ritz on top with cheese. Ummmm Yummmy!

You can crush them and use in meet balls, You can make lunchable type snacks. Etc...

You don't have to use them all at once if you have a little extra space in your freezer. Stick the unopened tubes in there and take 'em out as you need them. Otherwise, your church or your club prolly will have a Thanksgiving dinner shortly - donate 'em for the occasion. Or take 'em down to the nearest soup kitchen and donate 'em. If the packages are unopened, your local food pantry may accept 'em. Try any and all of these, just don't waste them by tossing them in the trash.

try meat loaf with
1/2 cup of crackers crushed
2 lbs ground beef
small onion chopped fine
few drops of milk
salt pepper
bake at 350 for 1 hour

puffed rice- 1 cup
ritz crackers -1/2 cup
onion - 1 small
lemon juice -a tsp
salt- to taste

toss everything together and mix well. add lemon juice in the end
