My favorite holiday is Christmas. (Mis vacaciones favoritas son Navidades.)
I can play piano.(Puedo jugar piano.)
My favorite actor is Johnny Depp. (Mi actor favorito es Johnny Depp.)

this is the right way to write this sentences:
1- Mi comida favorita son las ensaladas
2-Mis vacaciones favoritas son en Navidad
3-Yo puedo tocar el piano
4- this one you have it 100% right

Vacaciones may not have the same meaning in English. You're trying to say your favorite holiday or possibly time of the year is...
As far as the last one, the verb you used is es or ser. That's used with a permanent condition. It may be that you could change your mind in a year or so, if so, estar would be preferred.
In death, it's viewed as a tempory condition and ser is not used. So, it may be probable that estar is preferred when you're saying your favorite star is...
As far as puedo jugar piano. You might have to add an "a" before the jugar?

In Spanish, it is not poder but saber for knowing how to and not jugar but tocar for instruments:
Se tocar piano.
