2 lbs venison stewing meat, trimmed of fat, tenderized by pounding and cut into 1 1/2 inch chunks
salt and pepper
2 slices smoky bacon
2 tablespoons olive oil
1 large yellow onion, cut in half and sliced into half moons
2 carrots, chopped
4 red potatoes, cut into quarters
1 garlic clove, minced
2 tablespoons all-purpose flour
2/3 cup dry red wine or dry sherry
1 bay leaf
1/2 teaspoon dried thyme or 1 tablespoon chopped fresh thyme
1 (10 1/2 ounce) can beef broth
12 ounces fresh mushrooms, sliced or quartered
2 tablespoons balsamic vinegar

Season the venison with salt and pepper. In a large skillet over medium-high heat, cook the bacon until crisp; transfer to paper towels and crumble. Add the oil to the bacon drippings and brown the meat in batches on all sides, about 10 minutes total. Transfer to the slow cooker as you finish each batch. Add the onion, carrots and garlic to the skillet and cook. stirring, for 3 to 5 minutes. Sprinkle with the flour, stir and transfer to the cooker. Add the wine to the skillet, bring to a boil and cook, scraping up any browned bits stuck to the pan, until the wine has thickened slightly, 1 to 2 minutes. Pour into cooker. Add the bay leaf, thyme and broth; stir to evenly distribute. Cover and cook on LOW for 5 to 6 hours.
Add the mushrooms and crumbled bacon and stir to combine. Cover and continue to cook on LOW until the venison is tender enough to cut with a fork, another 3 hours. Remove the bay leaf and stir in the vinegar. Serve

I did everything it says and now its been cooking for 1 hour. IN THE MIDDLE OF THE RECIPE IT SAYS COOK 5-6 HRS, THATS WHERE I AM AT. When should I add the potato or how else should I do this, I need the potato but dont want to over cook it. People will be here to eat over for dinner in 5 hours so Im running late already!!

Ok I just found the recipe on recipezarr but it did not have potato in it so basically it was added my the person who wrote it to me and I cant ask them how I should do it now. Hope someone can help me. *fingers crossed*

I was thinking about cooking the potatos seperate. But Wont they taste plain?


One last thing.. does venison always toughen up before it gets tender again?
I was told this and hope its true!

It will depend on how you want them.
If you want them to be just cooked add them about an hour before it will be ready.
I would however boil and mash them as a dryish mash so the will mop up the gravy or sauce, unless you were having some sort of bread.
That does sound good however

I would clean and quarter the potatoes and add the last hour and 1/4 to cook with the meat. Sprinkle a little salt and pepper on them.

Add potatos the last 20 minutes or they will mush apart.

ok ususaly when you get a recipe the ingredients are in the order you are supposed to add them but if the order you put on your question is the order they gave you i would wait untill the boiling stage and add them but since your cooking on low i would add them at the begining of the 5 to 6 hours to allow them to get tender enough. good luck :)

Add with onions and carrots, because your slow cooking it will take about as long as your carrots and yes venison will get tener.
