I think it is supposed to bring out the flavor in some of the food. So, not very much is required. Too much salt will give the food s salty taste, but the correct amount will make the food more flavorful. At least, this is how I understand it.

A very small amount of a seasoning, like salt or pepper, etc. can bring out the flavor of a food, and improve how it tastes, without overwhelming the food with its own taste. If you really want to taste the salt, you need more than a pinch, but if you want to bring out the flavor of the food without covering it up, a pinch can help.

Because salt is a flavor enhancer, and a pinch can enhance other spices and/or seasonings greatly. Prime example, a pinch of salt brings out the garlic flavor in a crushed clove. Same with turmeric, cumin, fresh cilantro, and tarragon. As you can see, it is all over the spectrum. When used correctly, as an enhancer, you don't need as much of another more expensive spice.

The point is that some people can taste just a pinch of salt. The fact that you can't taste it doesn't mean nobody else can either. Do a Yahoo search on "super tasters."

Sometimes food is referred to as having a 'fresh' taste, and a pinch of salt takes that away.

What's the point of eating different foods if you're going to drown them out with saltiness? A little salt ENHANCES other flavors.....a lot of salt overpowers them!
