I buy the biggest size when it's on sale and portion it out. Usually in one pound packs and freeze.
It's a little runny when defrosted so I put it in a collander and drain and use it and you would never know.

To get additional water out of defrosted ricotta cheese, wrap in cheesecloth (tie each end with string or rubber band), lay on top of paper towel or clean cloth to absorb excess water, and place weight on top of the cheesewrap (try small plate weighted by bowl of water, etc). This procedure is v. necessary if you are using ricotta cheese in a cheesecake -- a good ingredient in cheesecakes, BTW.

I do and have never had a problem using it for lasagna.
